For a quick Mexican &quot;fix&quot; there is nothing quite so good as these cheesy quesadillas. Make this recipe your own with your own favorite additions.

Easy Cheesy Vegetarian Quesadillas Recipe

flour tortillas (large)

cheddar cheese (shredded)

vegetable oil

green chilies (finely chopped)

tomatoes (diced)

Salt and Pepper to taste

Heat 1 tablespoon of oil in a large frying pan over a medium heat.

Add one tortilla and sprinkle it with half the cheese, half the tomatoes and half the chilies. Add salt and pepper to taste.

Place another tortilla on top and press it down gently to seal the tortillas together. Cook the tortilla sandwich for about five minutes, turning once half way through the cooking time.

Check that the cheese has melted and transfer the quesadilla to a cutting board.

Repeat the process with the next tortilla.

Cut the quesadillas into wedges and serve immediately with chunky salsa, sour cream and guacamole.

Serves 4 as a main course or 8 to 10 as an appetizer.

Queso Fundido

Tbsp cooking oil (0.04)

lb. Mexican chorizo, beef or pork (4.58)

queso quesadilla, shredded (5.98)

Preheat oven to 300°F. Remove the chorizo from its casing (if any) and grate the cheese on the largest holes of a box grater.

Set an oven-safe skillet over medium heat, and add the tablespoon of oil. Cook the chorizo for 7 to 8 minutes, until the fat renders and the sausage is bubbly.

Drain the fat from the skillet, reserving 3 tablespoons of chorizo for garnish.  If it&#39;s very greasy, place it on top of paper towels to get as much fat off of it as possible before putting it back in the pan. Top the chorizo with the grated cheese.

Place the skillet in the oven and cook for 5 to 7 minutes, until the cheese is melted and bubbly.  Place the skillet on a heat-proof surface, garnish with reserved chorizo, and serve immediately.

Mexican Chicken Empanadas Recipe

chicken

onion, diced

garlic clove,

tbsp chili powder

tsp cumin

tomato sauce

Salt and pepper,

empanada dough

egg, beaten

Step 1.1

In a skillet over medium heat, sauté onion and garlic until softened.

Step 1.3

Add shredded chicken, chili powder, cumin, tomato sauce, salt, and pepper to skillet. Cook until heated through.

Step 1.4

Roll out empanada dough and cut into circles.

Spoon chicken mixture onto one side of each dough circle.

Step 1.6

Brush edges with beaten egg and fold dough over, sealing edges with a fork.

Step 1.7

Brush the tops of empanadas with remaining beaten egg.

Step 1.8

Bake in oven for 20-25 minutes until golden brown.
