Mexican Stuffed Shells freeze well as a casserole and can be made ahead of time. This is a great stuffed shell recipe stuffed with seasoned taco beef and topped with taco sauce and cheese.

Mexican Stuffed Shells

ground beef ((or ground turkey))

low-sodium taco seasoning

cream cheese

pasta shells ((about 6 ounces))

salsa

taco sauce

cheddar cheese

Monterrey jack cheese

green onions

Sour cream

Preheat oven to 350°.

In a pan brown the ground beef; add taco seasoning and prepare according to package directions. Add cream cheese, cover and simmer until cheese is melted. Stir together and mix well. Set aside and cool completely.

While ground beef is cooking, cook the pasta shells according to package directions; drain. Set shells out individually on cutting board or baking sheet so that they don’t stick together.

Pour salsa on bottom of a 9×13 baking dish. Stuff each shell with 1-2 tablespoons of the meat mixture. Place shells in 9×13 pan open side up. Evenly cover shells with taco sauce. Cover dish with foil and bake for 15-20 minutes.

After 15-20 minutes, add shredded cheese and bake for 5-10 more minutes with the foil removed until cheese melts. Top with green onions or olives if desired. Serve with sour cream and/or more salsa.

Preheat the oven to 375 degrees. Coat a 9" x 13" pan with cooking spray.

Place the taco sauce and salsa in a bowl and stir until combined. Spread the salsa mixture in an even layer at the bottom of the prepared pan.

Heat the vegetable oil in a large pan over medium heat. Add the onion and cook for 3-4 minutes or until translucent.&nbsp;

Add the ground beef and taco seasoning to the pan. Cook, breaking up the meat with a spatula, for 5-6 minutes or until beef is cooked through.

Fill the pasta shells with the beef mixture and place them in the pan on top of the salsa sauce.

Sprinkle the cheese over the top of the shells.

Bake, uncovered, for 20 minutes or until cheese is melted and sauce is bubbly.

Sprinkle with chopped cilantro and serve.

Tbsp Taco Seasoning (About one packet)

14.5 oz Crushed Tomatoes

Colby Jack Shredded Cheese

Salsa

Cilantro

Diced Tomatoes

Sliced Green Onions

Sour Cream

Lettuce

Preheat oven to 350 degrees F. Cook pasta shells for about 7 minutes or until just cooked through and soft. Drain.

In a skillet over medium heat, add the onion and ground beef. Brown and crumble the beef while the onion turns translucent. Add the crushed tomatoes and taco seasoning. Stir frequently until warmed throughout and bubbly. Drain in a mesh colander to remove excess water.

Coat the bottom of a 9x13in pan with 1 cup of salsa. Fill each pasta shell with about 2 tablespoon beef mixture and place shells open side up, close together in the dish.

Sprinkle with cheddar cheese throughout the top.

Cover with aluminum foil, preferably tented so it doesn&#39;t stick to the cheese. Bake for 15-20 minutes or until the cheese is bubbly. Top with desired taco toppings such as shredded lettuce, diced tomatoes, sour cream, cilantro, or green onions. Serve warm.

I made these without cheese because I just can’t eat it.  Hubby put cheese on his afterwards and really likes them.
