Michigan Hot Dog Sauce

pound(s) hamburger - 80/20 mix

tomato paste

chili powder

teaspoon(s) hot pepper, crushed red

paprika

teaspoon(s) chili sauce

water

chicken bouillon cube

Mackinac Island Pecan Fudge 

unsalted butter

milk

white sugar

brown sugar, firmly packed

salt

vanilla extract

cocoa powder

sugar

pecans, roughly chopped

Mackinac Island Pecan Fudge

Combine butter, milk, salt, brown and white sugars in a heavy pan on medium heat. Mix to combine and bring to a boil and stir continuously for 6 minutes.

Remove from heat and cool for 5 minutes, then add vanilla, cocoa powder, and powdered sugar. Beat with an electric mixer until fudge is smooth and thick. Fold in pecans.

Grease a baking sheet with butter, then pour mixture onto the sheet to cool.

When cool enough to handle, use a greased spatula to help roll mixture into a wide log, wrap it in plastic wrap, and place in fridge for 45 minutes before slicing.

beef

onion, finely chopped

ketchup

tbsp yellow mustard

Worcestershire sauce

tsp chili powder

tsp salt

tsp black pepper

1. In a saucepan, cook the ground beef and chopped onion over medium heat until the beef is browned and the onion is tender.

2. Stir in ketchup, mustard, Worcestershire sauce, chili powder, salt, and pepper. Simmer for 10 minutes, stirring occasionally.

3. Grill or cook the hot dogs in a skillet until heated through.

4. Place hot dogs in buns and top with the meat sauce. Serve immediately.
