Cookies and Cream Fudge

oreos (crushed into smaller pieces)

white chocolate (chopped (or white chocolate chips))

(14-oz) can (sweetened condensed milk)

Line an 8 x 8 baking pan with parchment paper. In a microwave-safe bowl, combine chocolate and condensed milk. Microwave for about 30 seconds and remove and stir until chocolate is mostly melted. Microwave again for another 30 seconds and stir again. Chocolate should be completely melted and smooth. If not, microwave slightly longer. Careful not to overheat in the microwave.

Spread half of the crushed Oreos across the bottom of the&nbsp;pan. Pour chocolate on top. Sprinkle remaining Oreos across surface, spreading evenly. Press down on Oreo pieces on top so that they go into the fudge and smooth out the top. Place in fridge several hours to set. Cut with sharp knife into bite-sized squares.

Line a baking sheet with foil or an 8x8 casserole dish.

In a large microwave-safe bowl place the chocolate chips.

Pour the sweetened condensed milk over the chocolate chips but do not mix.

Add the butter cubes on top of the milk/chips.

Microwave on high power for two to three minutes total (depending on the power of the microwave), stirring every 30 to 60 seconds until the butter has almost completely melted.

Immediately remove from microwave and stir until well combined.

Stir in vanilla and nuts.

Immediately pour into prepared dish and spread to your desired thickness.

Refrigerate until set.

Cut and serve.

Line an 8x8 baking dish with parchment paper and set aside.

Add chocolate chips, sweetened condensed milk, salt, and espresso powder (if using) to a medium heavy-bottomed saucepan over medium-low heat. Melt the chocolate, stirring frequently. Remove from heat and stir in vanilla extract. Stir in any optional mix-ins if using. (see fudge flavor variations in note)

Pour the mixture into the prepared pan and spread with an offset spatula or a rubber scraper if needed. Cover with plastic wrap and refrigerate for 2 hours to set. Remove from refrigerator and remove from baking dish. Cut into 24 or 48 individual squares.

Add chocolate chips and sweetened condensed milk to a large microwave-safe bowl. Heat at 30-second increments, stirring after each, until the fudge mixture is melted, smooth, and creamy. Stir in any optional mix-ins if using. (see fudge flavor variations in note)
