If you have a large piece of cocoa butter, chop it into smaller pieces. You can have it in uneven chunks, and I&#39;ll often do it this way, but the smaller, more even pieces will melt faster and more evenly.

Set up a double boiler by placing a heat-proof bowl over a pan of water. Make sure that the water isn&#39;t touching the bottom of the bowl and set over medium-low heat. Bring to a gentle simmer - don&#39;t boil as this increases the risk of scorching and water getting into your chocolate which may cause it to seize.

Add the cocoa butter to the bowl to melt without scorching or reaching temperatures that are too high. Stir or whisk* the cocoa butter often during this process to ensure even melting.

Once melted, add the powdered sugar and stir well to dissolve it.

Then add the milk powder and stir to incorporate.

Transfer the melted whited chocolate to a blender/food processor and blend to make the mixture smooth.**Alternatively, if you have a chocolate grinder ( chocolate melanger), you can let it run for several hours to grind the chocolate. This will grind the particles within the chocolate into tiny tiny microparticles until they are no longer discernible by the human tongue - like commercial chocolate.

Pour the mixture into the mould/s of your choice and leave in the fridge or freezer to set. You can then transfer the chocolate to an airtight container in the fridge (or keep it in the freezer).

L milk (skimmed or full fat/whole milk will work)

Pour room temperature milk into a big oven-safe dish. It&#039;s best to keep the milk at shallow levels, to dry out quickly. I tend to keep it at a maximum of an inch.

Depending on the size of your oven and/or dish, you can pour the milk into several dishes. *

Next, place the dishes into your oven at its lowest temperature. If it can go as low as 120-140ºF/50-60ºC, then that&#039;s ideal. Otherwise, select the lowest temperature that you can, using the fan-assisted option. 

If you don&#039;t have a fan option then leave the oven cracked open slightly, to let the evaporating liquid out so the milk dries quicker.

As the water evaporates, the milk will become pastier and pastier until finally, it becomes a thick paste. Make sure the milk paste doesn't turn brown while drying - that's a sign that the temperature is too high. 

Stir from time to time - this allows the water to evaporate evenly, especially when the milk starts turning to a paste. **

Once you get the milk paste, spread it out on a tray or over parchment paper and return to the oven or dehydrator to finish drying the milk.

Once the paste is completely dry, you will be able to easily remove it from the tray/baking sheet. At this point, it will be easily snappable, with no bend.

Grind the flakes into powder in a spice grinder or blender then pass the dehydrated milk powder through a fine-mesh sieve. Then grind the bigger pieces again- that way you'll achieve a very fine powder.

Store the powdered milk in an airtight container. Make sure there is no moisture in it at all and keep stored in a cool, dark place. Milk powder can be kept for months, if not years this way.

Take All purpose flour,semolina, milk powder, sugar,yeast in a bowl and whisk it well

Now add water in it and make a smooth paste.cover it with plastic wrap and let it sit for 30 minutes.

After 30 minutes it will rise remove plastic wrap and mix it well again.better to blend it in a blender.

Now take 1scoop of better and add in a non stick pan.when bubbles starts remove it from pan and cover with any towel or cloth.make 15 small qateyef with this better.

For filling.take 1cup milk,add custard powder,corn flour and mix it let this mixture to boil.then add sugar in it and cook it untill it becomes thick in consistency.as shown in picture.

Now add custard filling in white side of qatayef and brown side should be out. close it half with the help of fingers.as shown in picture.

You can also used whipped cream or hanged cheese along with thick cream.chopped walnuts and pistachios also use for filling...

Make sugar syrup. add 1/2 cup of sugar and 3/4 cup water in pan bring it to boil then add 2 lemon slice and 1tbsp of rose water in it.when it becomes thick in consistency.remove it from flame.

Add sugar syrup on the top while serving.... sprinkle chopped pistachios..
