chicken stock (plus additional as needed to thin)

28 oz can diced tomatoes

15 oz can crushed tomatoes

15 oz can light red kidney beans (drained)

15 oz can cannellini beans (drained)

green beans

dry Italian seasoning

salt

tsp black pepper

1/4-1/2 tsp crushed red pepper flakes ((optional adjust to your taste))

thyme

tsp sugar

bay leaves

ditalini pasta (small tubular pasta)

Italian parsley

Parmesan cheese bread

In a 6 quart Dutch oven or large heavy bottomed pot, heat olive oil over medium high heat. Add carrot, celery, onion and zucchini. Cook for 6-8 minutes until softened and beginning to brown. Add garlic, cook for 1 minute longer.

To the pot add chicken stock, diced tomatoes, crushed tomatoes kidney beans, cannellini beans, green beans, Italian seasoning, salt, black pepper, red pepper flakes, thyme, sugar and bay leaves. Cook covered over medium heat for 15 minutes.

To the pot add ditalini pasta. Cover and cook over medium for an additional 10-15 minutes or until pasta is tender. Check thickness of soup adding additional stock to thin, if needed.

Remove bay leaves, add 1/4 cup parsley, mixing into the soup.

Serve immediately garnished with additional parsley and grated Parmesan cheese.

Keto-Friendly Beefy Minestrone Soup

stew beef

garlic (smashed and chopped)

carrots (diced)

tomatoes

kale (chopped)

tomato paste

beef broth

beans

zucchini (diced)

cabbage

bell pepper (diced)

tbsp italian seasoning

tsp salt

tsp pepper

Add 2 tbsp of olive oil to a heavy bottom pot and turn the heat on to medium-high. Add the stewing beef that's been cut into smaller chunks, and brown in batches if necessary.

Add the onion, garlic, and celery and continue to cook for 3-4 minutes or until the onion is soft and translucent.

While this is cooking, prepare the kale. Wash it thoroughly and remove the leaves from the stems. Roughly chop it.

Put the low-sodium beef broth, a whole 28-ounce can of diced tomatoes, tomato paste and kale into the pot with the beef, onions, and carrots.

Simmer over low heat, covered, for about 20 minutes or until the beef is tender.

Add the remaining veggies and your favorite Italian seasoning blend, and simmer for an additional 10-15 minutes.

Season with 1 1/2 tsp of salt and 1/2 tsp of pepper, or to taste. Serve with a sprinkle of Parmesan cheese and dig in!

This recipe was a huge hit in my household and with a guest we had over for dinner with everyone wanting seconds and then leftovers for lunch the following day. Even my husband who is not fond of some of the veggies included (like the zucchini and cabbage) said that in the meal he found them to be enjoyable. 

I doubled the recipe adding red pepper flakes and then took a portion of the recipe to place into another pot to add in gluten free penne pasta to cook the last 10ish minutes for those that wanted noodles still. Both versions were enjoyed. Will be making this meal again very soon.

Just made this today and it's so tasty. One recipe that I know we'll make over and over again. Added more tomatoes as we love them. So delicious!!! Thank you. So hard to find Keto recipes that actually taste as good as they look. This, if you haven't tried it yet, is a must.
