Recipe video above. A quick to make pizza bread, made for tucking into lunchboxes or a great savoury snack for morning tea. It&#39;s something I created as an economical alternative to pizza bread from Bakers&#39; Delight, a popular Australian bakery chain. Use store-bought pizza sauce and pre-shredded cheese for convenience (true to name!), and whatever toppings your heart desires. Sour cream and olive oil keeps the crumb moist so it will stay fresh for 4 days in an airtight container.

Lunchbox pizza bread (quick)

red onion (, finely sliced)

green capsicum / bell pepper (, finely sliced)

kalamata olives

grams/ 2 oz pepperoni slices ((about 1/2 cup))

Preheat oven to 180°C/350°F (160°C fan). Oil spray a 23 x 33 cm (9 x 13&quot;) metal pan then line with baking / parchment paper (Note 3).

Whisk Dry ingredients in a large bowl.

Whisk Wet ingredients in a separate bowl until combined.

Combine Wet &amp; Dry - Pour Wet into the Dry ingredients. Mix with a rubber spatula until the flour is mostly mixed in but you can still see a bit of flour. Add cheese then stir until you can no longer see flour. Some small lumps is fine, they will bake out.

Assemble - Scrape into the baking pan and evenly spread - it&#39;s not that thick, remember it rises! Spread the surface with pizza sauce. Sprinkle with cheese, then (in this order) onion, capsicum, olives then pepperoni.

Bake 40 min - Bake 25 minutes uncovered. Cover with a baking tray (or foil) then bake for a further 15 minutes.

Cool 10 minutes in the pan then use the paper overhang to lift or slide out onto a cooling rack. Cool for a further 10 minutes before slicing to serve.

Serving - Great at room temp though for VIP&#39;s, sometimes I warm it in the oven, drizzle with a swish of olive oil and sprinkle with a pinch of oregano.

Wholemeal English muffins, split

Spinach leaves, washed

Cheese, grated or sliced

Mingle's Pizza Pizzaz Seasoning

Capsicum, sliced

Mushroom, sliced

Tomato, sliced

Red onion, thinly sliced

Tomato paste

Spread a layer of tomato paste on each English muffin half.

Top with spinach, capsicum, mushroom, tomato, and red onion. 

Sprinkle on some cheese and a dash of Mingle&#39;s Pizza Pizzaz Seasoning.

Pop the prepared mini pizzas into your air fryer and bake at 160°C for 5-7 minutes. Keep an eye out for that melty, golden cheese!

Once out of the air fryer, sprinkle a little more Mingle&#39;s Pizza seasoning on top for that extra pizza punch! 💥

Hawaiian pizza pops

fresh pineapple, peeled, cored, finely chopped

shaved ham, finely chopped

spring onion (shallot), thinly sliced

20.00 ml pizza sauce

(3/4 cup) coarsely grated mozzarella

milliliters (1/2 cup) warm water

tsp (7 grams/1 sachet) dried yeast

caster sugar

(1 2/3 cups) Bread & Pizza Plain Flour

Step 1

To make pizza dough, combine the water, yeast and sugar in a jug. Stand for 10 minutes or until foamy. Sift flour and salt into a bowl. Make a well in the centre. Add the yeast mixture and oil. Stir until a soft dough forms.

Step 2

Knead the dough on a lightly floured surface for 8-10 minutes or until smooth and elastic. Place in a greased bowl. Cover and set aside to prove for 40 minutes or until the dough doubles in size.

Step 3

Combine the pineapple, ham and spring onion in a bowl. Season.

Step 4

Preheat oven to 200C. Punch down dough. Knead until smooth. Roll out to a 42cm x 22cm rectangle. Spread with pizza sauce. Sprinkle with mozzarella. Top with the pineapple mixture, leaving a 2cm border at 1 long side. Starting from the other long side, roll up to form a log. Trim ends. Cut into 24 slices, about 1.5cm thick. Place slices on 2 lined trays, with room for spreading. Insert soaked bamboo skewers into each slice. Spray with oil.

Step 5

Bake, swapping trays halfway through cooking, for 14-15 minutes or until golden and crisp. Cool slightly.

Mini Pizza Recipe

water

tbsp active, dry yeast

tbsp sugar

bread flour

basil

oregano

Pizza Sauce

mozzarella cheese (shredded) (Monterey Jack, cheddar, crumbled feta

oz pepperoni (sliced)

Place the warm water in a large mixing bowl. Stir in the sugar and sprinkle the yeast over the top. Allow this to set for five minutes. The mixture will start to foam and bubble.

Add the oil, flour, salt, and herbs. Stir with a wooden spoon until a shaggy dough forms.

Transfer the dough to a lightly floured surface and knead for about five minutes until a smooth dough ball is formed.

Transfer the dough ball to a greased bowl, cover, and allow to rise until doubled in bulk, about an hour.

To make the dough by hand

Combine the dough ingredients in the bread machine pan, according to the order recommended by the manufacturer.

Set on dough and start the machine, checking after ten minutes to make sure all the ingredients have been incorporated and not stuck to the side of the pan. Scrape down any stray ingredients to insure they are mixed in.

To make the dough in a bread machine

Place the warm water in the mixing bowl. Stir in the sugar and sprinkle the yeast over the top. Allow this to set for five minutes. The mixture will start to foam and bubble.

Add the oil, flour, salt, and herbs. Attach the dough hook and run the machine until all the ingredients are incorporated, stopping the machine to scrape the sides as necessary. Knead with the dough hook until a smooth dough ball is formed.

To make the dough in a stand mixer

Preheat the oven to 500 °. Spray baking sheets with nonstick cooking spray and sprinkle with corn meal to prevent sticking or line the pans with parchment paper for easier cleanup.

Divide the dough into 16 portions. Flatten each portion into a thin round and place on the cooking sheet.

Spread sauce and sprinkle toppings as desired.

Bake for 8 to 10 minutes or until the crust is crisp and the cheese melted and lightly browned.

Once the dough is ready

Wrap cooled pizzas in foil or plastic wrap and stash in a larger ziptop freezer bag. Thaw and reheat in a 350 oven for about 5 minutes.

To freeze baked pizzas

Assemble the pizzas as directed, but instead of baking, place the trays in the freezer. Once the pizzas are frozen solid (this will take several hours), stack them between layers of patty papers or waxed paper and store in a freezer bag or box in the freezer. To serve: bake from frozen at 450 degrees, for 10 to 12 minutes.

To freeze unbaked pizzas

These were a huge hit! I frozen them completely baked and I had to fight my family to actually have enough to freeze. I throw them in my kid’s lunches and my husband can grab one to reheat for his lunch at home.

Made this twice so far with my toddlers who now enjoy pizza. It’s a quick and easy recipe, and tastes great. My kids are looking forward to many more homemade pizza days/nights. I also love oregano and never thought to add it to the dough until I saw this recipe. I doubt I’ll be buying anymore pizza moving forward. Homemade is the way to go. Thanks for the recipe! :)

I have made these for a while using my go-to slow proof in the fridge dough with garlic powder/herbs.  I make a bunch when I do for the freezer. Before I top, I brush each round with olive oil, prick with a fork and par-bake about 5 minutes at 425F; completely cool on wire racks and then top. Then I Flash freeze until solid and double wrap each in plastic wrap before placing in freezer bags (4 per bag), air removed and stack flat. To bake, I find it bakes better in my oven at 425-450F for about 15 minutes from frozen (less time at 450F).

Made these for my kids' lunch today.  Easy and tasty!  Love the addition of herbs to the dough.  My kids always want lunchables pizza kits, but I rarely buy them for obvious reasons.  Can spend over $10 on them for my 5 kids!  These mini pizzas are great for freezing.  Also, I baked some of the mini crusts untopped: prick it all over with a fork, lowered the temp to 425 for 3 min, flipped them and baked for another 3 minutes.  Now we can make our own pizza kits!

Big hit for lunch today. And my husband is looking forward to having homemade pizza whenever he wants.
