These mini strawberry cheesecakes are easy to make (the simple ingredients will surprise you!) and they disappear fast. The texture of these is phenomenal! The cheesecake is creamy and smooth with a buttery crust and the fresh strawberry topping cuts the sweetness and makes every bite irresistible. !&nbsp;

Mini Strawberry Cheesecakes Recipe

graham cracker crumbs (from 12 whole crackers)

Tbsp unsalted butter (melted)

oz Cream Cheese (from two 8 oz packages, softened)

eggs (room temperature)

oz sweetened condensed milk (room temperature)

heavy whipping cream (chilled)

tsp vanilla extract

Tbsp sugar

strawberries (halved)

Preheat Oven to 350˚F. In a small bowl, combine 1 1/2 cups graham cracker crumbs with 6 Tbsp butter and stir together to moisten crumbs. Line standard sized 24-count muffin tins with paper liners and divide crumbs between 24 liners (about 1 Tbsp each). Press crumbs into base with fingers or a small spoon.

To make the filling: In the bowl of a stand mixer fitted with whisk, add 16 oz softened cream cheese and 3 eggs. Beat on high speed 5 min or until smooth, scraping down the bowl a couple of times. Add condensed milk and mix on low speed until blended (2 min), scraping down the bowl as needed.

Divide filling evenly between cupcake liners, filling each about 3/4 full (For easy portioning, use a leveled ice cream scoop). Bake in preheated oven at 350˚F for 13-15 mins or until set with a very slight jiggle in the center. Slight cracking is normal but if deep cracking occurs, they are over-baking. Remove from oven and let cool to room temperature in pans then refrigerate until chilled.

Top with chilled strawberry sauce (recipe here). Make whipped cream by beating together 1 cup heavy cream with 1/2 tsp vanilla and 1 Tbsp sugar for about 2 mins on high speed or until fluffy then pipe swirls using a large open star tip over the center of each cheesecake. Place a halved strawberry over whipped cream.

Cook the strawberries while stirring frequently, but being careful not to break them up too much over low heat until syrupy and soft, about 10 minutes. The water should evaporate and the juices around the strawberries should thicken. If they threaten to burn, lower the heat and continue at a gentle simmer.

These delicious low calorie strawberry cheesecakes are just 47 calories each. Featuring a simple homemade biscuit base and super low calorie creamy cheesecake filling all topped with a simple strawberry sauce, these cheesecakes are perfect as a low calorie dessert or snack!

50 Calorie Strawberry Cheesecakes

g Philadelphia lightest cream cheese (room temperature)

g 0% fat yogurt (room temperature)

Pre-heat oven to 180°C (356°F). Prepare a 12-count muffin pan with 8 cupcake liners.

In a medium bowl, make the cheesecake base by mixing together the flour, stevia, applesauce and baking soda until well combined.

Spoon 1-2 tsp&#39;s of the base into each cupcake liner, flatten using a spoon to evenly distribute the dough and bake for 5 minutes. Set aside once baked.

Decrease the oven temperature to 160°C (320°F).

In the meantime, make the cheesecake filling by whisking together the egg and stevia until light and fluffy. Then whisk in the yogurt, cream cheese and vanilla. Fold in the strawberries.

Divide the cheesecake batter evenly between the 8 cupcake cases and bake for 20 minutes. Once the mini cheesecakes are ready, let them cool slightly in the muffin pan before transferring to an airtight container and allowing them to chill in the fridge for at least 1 hour.

Make the strawberry sauce by blending up the strawberries and powdered sweetener until  smooth and lump-free. Top each cheesecake with about 1 tbsp of the sauce and enjoy!
