These lovely layered mini trifles will wow your guests and can be made up a day ahead.

Mini Trifles

jelly crystals ((1 packet Aeroplane jelly if you're in Australia))

mls cream ((tinned cream, thickened cream

Tiramisu sponge fingers ((about 1 cup fresh sponge chopped in small squares))

port, sherry juice

custard ((bought

berries ((I used strawberries, raspberries and blackberries))

200 mls thickened cream ((known

custard powder

mint leaves

Make up jelly following the instructions. This should make about 2 cups of jelly.

Use 1 1/4 cups of the liquid jelly mixture to fill the bottoms of 6 small dessert dishes or wine glasses.

Put the 6 glasses and remaining mixture into the fridge.

When the remaining mixture is close to setting (but still able to be poured (this may take 1-2 hours), combine the mixture with cream and beat on high for 4 minutes.

The jelly in the cups should almost be set by this stage. Carefully pour the jelly and cream mixture (flummery) to add another layer to each of the glasses.

Allow to set.

Crush sponge fingers in a tray and then pour over port, sherry or muscat. Substitute juice if you&#039;d prefer a kids or non-alcoholic version of the trifle.

Add sponge fingers as the next layer and then pour a layer of custard in each glass.

Add chopped berries as another layer, reserving 6 berries for decorating.

Whip thickened cream and custard powder until the cream forms stiff peaks.

Pipe cream onto top of layers and decorate each trifle with a berry and mint leaf.

Mini Christmas Trifles

Mini Tiramisu Trifles with a layer of mascarpone cheese, ladyfingers and espresso! A delicious, easy &amp; fun way to enjoy tiramisu &amp; trifle at the same time!

Mini Tiramisu Trifles

oz (565 grams) mascarpone cheese

tbsp (39 grams) sugar

(240 milliliters) heavy whipping cream, cold

(58 grams) powdered sugar

tsp vanilla extract

(180 milliliters) hot water

tbsp (45 milliliters) instant espresso powder

lady fingers*

(120 milliliters) heavy whipping cream

(29 grams) powdered sugar

tbsp (30 milliliters) kahlua

Mix mascarpone cheese and sugar together until combined. Do not over mix or the mascarpone cheese can thin out. Set aside.

2. In another bowl, add the heavy whipping cream, powdered sugar and vanilla extract and whip until stiff peaks form.

3. Carefully fold the whipped cream into the mascarpone cheese mixture. Set aside.

4. In another bowl, combine the hot water, espresso powder and sugar.

5. To layer the trifles, dip the ladyfingers into the espresso mixture one at a time and place into the bottom of the trifle cup. Use two to three ladyfingers and break into pieces as needed so they fit in the cup and create a full layer.

6. Pipe or spoon a layer of mascarpone filling on top of the ladyfingers.

7. Repeat another layer of ladyfingers and mascarpone filling.

8. After completing the trifles, make the whipped cream.

9. Add the heavy whipping cream, powdered sugar and kahlua to a large mixer bowl and whip until stiff peaks form.

10. Pipe a swirl of whipped cream on top of each trifle, then sprinkle with cocoa powder, if desired.

11. Refrigerate trifles until ready to serve. Trifles are best for 2-3 days.


* I used the softer more cake-like ladyfingers in these trifles, as opposed to the more traditional hard ladyfingers.
