St. Nick&#039;s naughty &amp; nice chocolate peppermint smoothie made with simple, nourishing ingredients and an option to make it boozy! This healthy mint chocolate smoothie recipe is naturally sweetened with dates and perfect for mixing in your favorite smoothie add-ins. A quick and easy breakfast or snack you&#039;ll love!

St. Nick’s Naughty &amp; Nice Chocolate Peppermint Smoothie

Medjool dates (¼ cup packed pitted Medjool dates)

almond milk

cauliflower

cacao powder

tahini (or sub chocolate tahini or chocolate almond butter)

vanilla extract

⅛ teaspoon peppermint extract

sea salt

shot of Bailey’s cream, Peppermint Schnapp’s or Kahula

espresso powder

protein powder

flaxseed meal

spinach

¼ cup gluten free rolled oats

First soak your pitted dates in 1 cup of HOT water for at least 5 minutes. This will help them soften up and perfect for blending. While the dates are soaking you can get all your other ingredients out, measured and ready.

Next add all ingredients to a high powered blender: pitted dates, almond milk, frozen cauliflower, cacao powder, tahini, vanilla and peppermint extract and a pinch of salt. Feel free to add any optional add-ins to your smoothie if you’d like. Blend until smooth, adding more almond milk to thin, if necessary. Pour into a glass and enjoy! Serves 1. Feel free to double the recipe to serve 2.

banana

mint leaves (see notes)

kale

cocoa (or cacao) powder

chia seeds

salt

Medjool date (optional for extra sweetness)

Add everything to a blender and blend until smooth and creamy!

A thick and creamy plant-based smoothie filled with fresh mint and chocolate. A healthy breakfast, snack or dessert that tastes similar to a mint chip milkshake.

Healthy Mint Chocolate Chip Smoothie

milk (I use unsweetened vanilla almond milk)

small/medium sized avocado

mint leaves (see note)

vanilla protein powder

crushed ice (or more, if you'd like it thicker)

cacao nibs or chocolate chips (see note)

whipped cream coconut cream (for garnish, optional)

Place banana, milk, spinach, avocado, mint, protein powder, and ice in a blender. Process until smooth. Add cacao nibs and stir or briefly pulse (don't completely puree the chocolate otherwise the color of the smoothie will turn brown). Serve immediately, garnished with whipped cream and additional cacao nibs, if desired.
