mixed vegetable curry

Simple vegetable curry made with mixed vegetables, spices and herbs. This Indian style dish is easy to make and tastes delicious. Serve it with rice, roti, naan or bread.

Vegetable Curry

ginger garlic paste ((or 1 teaspoon each crushed))

cumin seeds ((Jeera))

onions (very finely chopped)

green chili

tomatoes (finely chopped or puree)

kasuri methi ((optional))

coriander leaves ((chopped))

carrot ((peeled, chopped, 1 medium))

potatoes ((peeled, chopped, 1 medium))

green beans

cauliflower florets ((substitute with peas, potatoes & carrots))

Pour oil to a hot pan. Add cumin seeds. When they begin to splutter, stir in the ginger garlic paste. Let it fry for 1 minute. Do not burn.

Add onions &amp; green chilli. Saute on a medium high heat until golden. Add tomatoes, salt and turmeric. Cook until the tomatoes turn mushy.

Add red chili powder and garam masala.

Mix &amp; cook until the onion tomato mix turns soft, mushy &amp; fragrant. This step takes about 2 to 3 mins.

Add all the vegetables and saute for 2 to 3 mins on a medium high heat. Pour ¾ cup hot water &amp; mix well.

Cover and cook on a low to medium heat until the veggies are fork tender but not mushy. If the veggies are undercooked and the curry looks dry, you may pour more hot water to bring it to consistency.

Taste test and add more salt and garam masala if required.

Optional - Crush kasuri methi in your palms and sprinkle. Mix well and cook for 1 to 2 mins. If you want you may pour 1 to 2 to 3 tbsps heavy cream or ¼ cup coconut milk.

Turn off the heat and garnish vegetable curry with coriander leaves. Serve with rice, roti, naan or bread.

How to Make Vegetable curry

Indian vegetable curry is a very easy to make and flavorful curry loaded with a lot of vegetables. Serve it with basmati rice or any Indian flatbread to enjoy a delicious home-cooked Indian meal. It&#39;s a must try recipe by every curry lover.

Roughly chop onion, ginger, and garlic. Put them in a grinding jar and make a smooth paste. Take it out in a bowl and keep aside.

In the same grinding jar put roughly chopped tomatoes and green chilies. Make a paste. Take it out in a separate bowl.

Heat oil in a cooking pot. Add bay leaf and cumin seeds. Saute until they start spluttering and become fragrant. It will take just a few seconds if the oil is hot enough.

Add onion garlic paste and cook until the paste becomes golden brown. Keep on stirring in between. If the onion starts sticking to the bottom of the pot, add 1-2 tablespoons of water and continue cooking.

Add turmeric powder, kasoori methi, coriander powder, red chili powder, and 1-2 tablespoons of water. Mix and cook for about a minute.

Next, add tomato-green chili paste and salt. Mix, and cook until the tomato is nicely cooked. It will take around 8-10 minutes.

Add tomato paste and cook for about a minute.

Add chopped vegetables, mix everything, and cook without water for around 2 minutes.

After 2 minutes, add water, mix, and cover the pot. Cook covered for around 15 minutes or until the potatoes are cooked.

Switch off the stove. Add garam masala and cream. Keep stirring until the cream gets nicely mixed in the gravy.

Finally, add chopped cilantro and lime juice. Mix and serve hot with rice or roti.
