olive oil

Pound beef

For a less meaty and more cheese beef

Cans beef broth- 29 ounces total

water

pasta sauce

Pound dried mostaccioli noodles (also called penne pasta)

Cups Mozzarella Cheese

Turn Ninja Foodi on Saute- Hi

Add Olive Oil

Add onions, ground beef and garlic.  Continue to sauté until beef is evenly browned.  If you use lean ground beef, you do NOT need to drain the grease from the pot.  If you use a high fat content ground beef you will need to drain the grease.  You can do so by either using a ladle to scoop the grease out or you can CAREFULLY remove the inner pot and pour the grease out.  I HIGHLY recommend using a low fat ground beef to avoid this step all together.

Turn off the Ninja Foodi.  You no longer need to sauté anything in the pot.

Add sugar, Italian seasoning an red pepper flakes

Pour in pasta sauce

Pour 1 cup of water into pasta sauce jar- shake- pour water mixture into Ninja Foodi pot.  This will help you get all of the sauce goodness out of the jar!  No waste!

Pour 2 cans of beef broth into Ninja Foodi pot.

Stir beef and liquid until well combined

Pour in mostaccioli pasta

DO NOT STIR!  If you stir, you are likely to get a burn or error message.

Make sure that all pasta is covered by liquid (or as much as possible).  I just pushed down on the noodles with a spatula until they were covered with liquid.

Close the pressure cooker lid, turn Ninja Foodi back on and cook on high for 3 minutes.

Once the timer goes off, natural release pressure for 3 minutes.  Quick release remaining pressure. Turn off Ninja Foodi.

Open the pressure cooker lid and stir pasta together.  Be sure to stir well and ensure no pasta is clumped together.

Add in 1 cup of shredded mozzarella cheese and stir.

Sprinkle remaining 1 cup of mozzarella cheese on top.

Using the broiler lid, close lid and broil on high for 5 minutes or just until cheese is melted and golden brown.

These traditional Italian Mostaccioli di Mamma cookies are a must for your Christmas holiday cookie platter. They are an almond based, soft,chocolaty, spicy, honey-flavored cookie.

Mostaccioli di Mamma

all purpose flour (780 grams)

baking powder

cloves

cinnamon

oz unsweetened cocoa powder (2/3 cup)

almond (3 1/2 cups)

eggs (extra large, room temperature)

honey (1 1/3 cups, slight warmed)

sugar

oranges

juice of 1 orange

vanilla extract

chocolate

Preheat oven to 350° F. Position rack in the center.

Line baking sheet with parchment paper.

In a large mixing bowl, sift together dry ingredients. (flour, baking powder, cloves, cinnamon, and cocoa).

Add ground almonds and incorporate with the dry ingredients. Set aside.

In a large mixing bowl or the bowl of an electric mixer fitted with the whisk attachment, beat the eggs for 2-3 minutes.

Add honey. Continue to whisk until well thickened.

Add sugar. Beat well.

Add orange zest, juice and extract.

Switch to paddle attachment. Add flour mixture until just combined. (Dough will be soft and sticky).

Working with dough in small batches, place on well-floured wooden board and roll out to 1/4 - 1/2" thick.&nbsp;

With a rhombus-shaped cutter or with a knife cut dough (I use a 2-inch cutter).&nbsp;

Place on cookie sheets.

Continue until all the dough has been shaped. Leftover dough trimmings&nbsp; can be re-rolled.&nbsp;

Bake at 350° F for about 15-18 minutes or until firm to touch.

Let cool completely before glazing with chocolate.

Mostaccioli Cookies

Easy Baked Mostaccioli is a classic Italian dish that takes very little effort to make, but has a ton of flavor! This comforting dish is a dinner staple!

Baked Mostaccioli (Easy Classic Recipe)

lb rigatoni or penne pasta noodles

tsp extra virgin olive oil

lb Italian sausage (medium spice)

marinara sauce

yellow onion, (chopped)

tsp minced garlic

mozzarella cheese, (freshly shredded)

parmesan cheese

oregano

basil leaves

salt

¼ tsp black pepper

tsp crushed red pepper flakes, (optional)

Cook pasta al dente (do no overcook) according to directions on the box. Strain pasta and add back to pasta pot, set aside.

Preheat oven to 350 degrees F.

Place a large skillet on the stovetop, add oil and heat 30 seconds over medium heat. Add Italian sausage and cook for 5 minutes while breaking apart with a spatula. Sauté until mostly cooked through, about 2 more minutes. Slide sausage to the side of the skillet, add chopped onion, minced garlic, and seasonings and cook for 3 more minutes while sautéing.  Remove from heat and set aside.

Add the sausage mixture into the pot with the pasta, half of the shredded mozzarella cheese, and marinara sauce; mix to combine.

Add the mixture to a greased oven-safe casserole dish, then top with the remaining mozzarella and parmesan cheeses and sprinkle a bit of additional dried oregano and basil.

Place Mostaccioli in the oven and cook for 20 minutes. Switch the oven to broil, then broil for 3-5 minutes, watching closely so the cheese doesn’t burn. Carefully remove. Top with fresh basil and serve!
