Chicken satay is a party favourite. Thread the chicken pieces onto soaked bamboo skewers to cook on the barbecue. 

Chicken satay

450 grams/1lb boneless, skinless chicken breasts, cut into 2.5cm/1in cubes

1½ tbsp groundnut (peanut) oil

tbsp light soy sauce

Shaoxing rice wine

salt

black pepper

tsp cornflour

sesame paste peanut butter

tbsp chilli bean sauce (available from Asian grocers)

tbsp garlic

tsp chilli oil

tbsp Chinese white rice vinegar or cider vinegar

pepper

tsp sugar

tbsp water

onions

cucumbers

This Maylasian-style, coconutty, veg-packed slow cooker chicken curry is easy to prepare for the family. It's mild enoug for all the family.

Equipment and preparation: For this recipe, you will need a 4.5 litre/8 pint slow-cooker.


Slow cooker chicken curry

onions, quartered

grams/¾oz fresh root ginger,

garlic cloves,

tbsp medium curry powder

tsp dried chilli flakes

tsp turmeric

sunflower oil

chicken thighs, boned, skinned, halved

cinnamon

star anise

waxy potatoes, peeled, cut into 3cm/1¼in chunks

carrots, peeled, sliced into 1.5cm/½in rounds

tbsp cornflour

coconut milk

green beans,

lemongrass stalks, dry outer leaves removed, roughly chopped

red onions, quartered

grams/1 ounces fresh root ginger, peeled and roughly chopped

75 grams/2½oz chunk galangal, peeled and roughly chopped

tbsp coriander

400 milliliters/14fl oz can coconut milk

kaffir lime leaves

tbsp soft light brown sugar or palm sugar

tamarind paste lime

tbsp dark soy sauce

tsp flaked sea salt, plus extra to season

coconut flakes, to serve (optional)
