Easy Caprese Chicken 

chicken

Kosher salt

Black pepper

virgin olive oil

Basil pesto (Homemade

mozzarella cheese (about 1/4 to 1/2 inch in thickness each)

tomatoes

Balsamic glaze

basil leaves

Pat chicken dry and season with salt and pepper (see cook's tip #1 below for quick and even cooking)

Heat an indoor griddle or pan over high heat. Drizzle about 1 tbsp extra virgin olive oil to coat bottom of pan. (See Cook's Tip #2 if you prefer to use outdoor grill)

Add chicken and cook for 3 to 5 minutes on each side or till done (chicken's internal temperature should register 165 degrees F.)

At the last couple minutes or so of cooking, top each piece of chicken with a bit of the basil pesto, then add mozzarella slice on top.

Remove from heat. Add fresh basil leaves and tomato slices on top, spoon a little balsamic glaze on top. Finally, sprinkle fresh basil ribbons.

This is my new favorite chicken breast recipe. We loved this!!! I used my potato masher to tenderize the chicken.

Italian seasoning

Absolutely delicious!  The marinade is so good and you can’t go wrong with a topping of fresh mozzarella, avocado and tomatoes.

I’ve made this a few times - I love it with pepper jack cheese.  So quick and easy.

I eat this at least twice a week.  I wish I could replace the chicken w/ something though );

We really enjoyed this recipe! Flavors melded together nicely, along with some added dry rub for a spicy kick to go along with the sweet. Pepper Jack cheese works well with this recipe.

This recipe is very excellent though doing it indoors on a grill pan takes a little less cook time and trying to keep the mozz, avocado, and tomato from slipping off was quite challenging. I think I need flatter chicken breasts but the taste is outstanding. My expertise is less so.

I made it exactly as the recipe called WITH the avocado.  It was a nice change.  Thus the recipe name "California Grilled Chicken".    I sprinkled see salt and dried Italian seasoning on each tomato before adding the fresh basil and drizzling with a balsamic reduction.  It was a hit!!  This also made for a very pretty presentation on the plate

Hint... I  pounded out the chicken before marinating and grilling.  The chicken cooked evenly and quickly and was very tender with no overcooked/undercooked areas.  Will definitely make again.

Served with Strawberry Spinach Salad with roasted pecans & feta cheese tossed in a light balsamic/honey dressing AND baked fingerling potatoes lightly seasoned with dried rosemary and italian seasoning.

I baked it at 350 in a baking dish with some of the marinade poured over. Cover with foil. Bake for 45 to one hour, depending on the thickness. Uncover and place cheese, tomatoes, (avocado—didn’t use), and basil on top.  Keep in oven for about 5 minutes. Serve. Delicious!

Okay, now this is so darn good. I had this with Mediterranean Chickpea Salad and homemade bread.

California Grilled Chicken Is A Primo Summer Dinner

This recipe for chicken caprese is grilled seasoned chicken, topped with fresh mozzarella, ripe tomatoes, basil and balsamic reduction. A quick and easy dinner that's easy enough for a busy weeknight but special enough to serve to company!

Chicken Caprese

salt and pepper

mozzarella cheese

balsamic glaze (or balsamic reduction)

basil

Heat a grill or grill pan over medium high heat.

Drizzle 1 tablespoon of olive oil over chicken breasts and season to taste with salt and pepper. Sprinkle italian seasoning over the chicken.

Place the chicken on the grill and cook for 3-5 minutes per side, or until done. Cook time will vary depending on the thickness of your chicken breasts.

When chicken is done top with a slice of mozzarella cheese and cook for 1 more minute.

Remove from heat and place chicken breasts on a plate. Top each breast with 1 slice of tomato, thinly sliced basil and salt and pepper to taste. Drizzle with balsamic glaze and serve.

30-Minute Mozzarella Chicken Skillet

onion (finely chopped)

garlic (minced

(15 oz) can crushed tomatoes

EACH garlic powder, crushed red pepper, salt, pepper

oz mozzarella

basil (to garnish)

Preheat the oven to 400ºF.

Heat 2 tablespoons olive oil in a large heavy-duty (oven-safe) skillet over medium-high heat. Add the onion and cook for 2-3 minutes or until softened and the edges are slightly golden.

Add the garlic and sauté for 30 seconds then add the crushed tomatoes and spices. Sauté for 2 minutes.

Add the chicken breasts to the skillet and cook for 1-2 minutes per side. Transfer the pan to the oven and bake for 10 minutes.

Flip the chicken breasts over and top with fresh mozzarella slices (or shredded mozzarella) and bake another 10 minutes or until chicken is cooked through to an internal temperature of 165ºF.

Garnish with fresh basil and serve immediately.
