This easy recipe for Butter Chicken is as authentic as it can get! Make classic Butter Chicken or Murgh Makhani at home, just like the one you get at your favorite Indian restaurant.

Butter Chicken - Murgh Makhani

Chicken breast

Yogurt

turmeric powder

Kashmiri Chili powder

garam masala

garlic paste (or use minced ginger and garlic)

ghee or melted butter

salt

butter (or 5 tablespoons butter)

Kashmiri Chili powder (or use paprika powder)

cashews

tomato puree (1 cup = 250 ml)

honey

kasuri methi ((dried fenugreek leaves))

cream

Salt

Start by marinating the chicken - lightly score the chicken pieces and mix together the chicken with all the ingredients for the marinade. Keep the chicken pieces into a bowl, cover with cling film and transfer to the fridge.

Let the marinated chicken sit for 30-40 minutes in the fridge, or if possible, overnight.

Skewer the chicken on barbeue skewers and grill them either on the barbeque or stovetop or in the oven in grill mode.  Turn the pieces over halfway through, to cook them evenly. The chicken pieces should have a little char on them. Once griled, keep aside for later.

Prepare the cashew paste – in a blender, blend together the pre-soaked cashews with a little water to form a smooth paste. Keep aside for later.

In a heavy bottom pot on the stovetop, Heat some butter. Once the butter melts, add ginger and garlic paste followed by turmeric and red chili powder. Saute briefly, and add the tomato puree.

Add any leftover marinade from the chicken pieces, followed by the kasuri methi leaves, and then the garam masala powder.

Add in the cashew paste and honey and turn off the heat.

Blend together all the ingredients using a stick blender, forming a smooth sauce.

Add salt to season and let the sauce simmer for 3-4 minutes.

Then add the grilled chicken pieces and mix into the sauce.

Add a tablespoon of cream and simmer the butter chicken for 5-6 minutes. Turn off the heat once cooked.

Serve hot with naan or basmati rice.

Instant Pot Vegan Butter Chicken With Soy Curls And Chickpeas - Oil-Free

Instant Pot Vegan Butter Chicken with Soy Curls and Chickpeas - oil-free

Blend the tomatoes, garlic, ginger, chile with water until smooth.

Add pureed tomato mixture to the Instant pot or pressure cooker.  Add soy curls, chickpeas, spices and salt. Close the lid and press manual/pressure cook for 8 to 10 minutes. (6 minutes for stove top pressure cooker). Quick release after 10 minutes. (See notes for Stove top instructions)

Start the IP on saute (medium heat for stove top pressure cooker). Add the cashew cream, garam masala, sweetener and fenugreek leaves and mix in. Bring to a boil, taste and adjust salt, heat, sweet. Add more cayenne and salt if needed. Fold in the chopped green chile, ginger and cilantro and press cancel(take off heat).&nbsp;

At this point you can add some vegan butter or oil for additional buttery flavor.&nbsp;Serve hot over rice or with flatbread or Naan.

Delicious restaurant-style butter chicken made right at home with simple ingredients. This recipe is exactly how they make butter chicken in restaurants -- and i've had people tell me it's actually better! Trust me when I say it's finger lickin' good!

Finger Lickin' Butter Chicken (Murgh Makhani)

In a medium bowl, combine the tandoori masala, ginger, garlic, and yogurt. Whisk until smooth, adjust seasonings to preference. Add the chicken and allow to marinate for at least 20 minutes and ideally for 12-24 hours, covered in the refrigerator.

Heat the ghee in a dutch oven or heavy bottom pot over medium heat. Add the onions and sauté until they turn translucent and start to sweat, about 5-7 minutes, don't allow the onions to brown. Add ginger and garlic paste and let cook for 30 seconds, stirring so it doesn't burn. Add the can of crushed tomatoes along with the chili powder, coriander powder, and cumin powder and continue to cook for 5 minutes, if the mixture starts bubbling rapidly, add about ¼ cup of water and continue to cook.

Remove from heat, add the mixture to a blender and blend until smooth, you may need to add a couple water to help it blend (up to ¼ cup).  Depending on how powerful your blender is, you may want to blend the mixture in two batches. Remember to hold the lid of the blender down with a kitchen towel when blending, to avoid accidents.

Heat the remaining tablespoon of oil in the dutch oven over medium heat. Add the marinated chicken (discard any excess marinade) and cook for about 5-6 minutes, stirring as required to brown all sides. Add the butter chicken sauce to the pot and heat everything through. Once it starts to bubble, add the cream and garam masala. When the sauce regains a simmer, add the crushed fenugreek leaves. Serve over basmati rice or with naan.

green chili (finely chopped)

green cardamom pods

cinnamon

½ teaspoon garam masala

cloves

cilantro, red onion, heavy cream (to garnish)

Trim the fat from the chicken thighs. Cube the chicken into 1-inch pieces.

In a large bowl, mix together the items for the marinade - the dahi, lemon juice, ginger garlic paste, finely chopped green chilis, garam masala, turmeric, ground cumin, kashmiri chili powder, and salt. Once the marinade is ready, add the chicken into the bowl and toss so that it&#39;s fully coated.

Cover the chicken with plastic wrap and marinate for a minimum of 30 minutes, up to 24 hours.

Crush the green cardamom pods in a mortar and pestle or under the flat of a knife. Remove the black seeds inside the pod and discard the green part.

Melt two tablespoons of butter in a pot on medium heat. Add the star anise, black cardamom, seeds from the green cardamom pods, cinnamon stick, and cumin seeds and allow the flavor to infuse with the butter for a minute.

Add the chopped onions and ginger garlic paste into the butter. Sauté until the onions start to brown.

Add the ground spices - the garam masala, coriander, cloves, and kashmiri chili powder. Give everything a good stir and let it cook for 1 minute so the spices can bloom in the butter. Don&#39;t let them sit for longer, otherwise the spices will burn.

Stir in the tomato paste, canned crushed tomatoes, cashews (optional), sugar, and salt to taste.

Switch the stove to low to medium heat, and allow the sauce to simmer. It&#39;ll start to thicken and darken significantly. This can take 5-10 minutes. The fat will start to release on the sides and form little pools. Switch the heat off.

While the sauce is simmering in the step above, heat the cast iron skillet on high heat. Add a tablespoon of ghee or neutral oil in the pan and add in the marinated chicken. Cook on each side for 3-4 minutes until it reaches an internal temperature of 165 ºF and the chicken has browned. Set aside once done.

Remove and discard the black cardamom pod, star anise, and cinnamon stick. Transfer the contents of the pot into a blender along with the rest of the butter. Blend the sauce until it&#39;s completely smooth. If it&#39;s too thick, add a tablespoon of water at a time. Add up to a 1/2 cup of hot water based off of preference if you’d like a looser curry.

Transfer the sauce back into the pan and bring it back to a soft simmer. Add the chicken with all of the juices and spices into the pan. Stir to coat and simmer for an additional 5 minutes, until the fat begins to separate again.

Slowly pour in the heavy cream while stirring. Continue to simmer for 2-3 minutes until the sauce is thick and creamy. This is a great point to taste and adjust for spices.

Remove from heat and finish off the sauce with a pinch of kasuri methi.

Garnish the butter chicken with heavy cream, cilantro, and finely diced red onions. Serve hot with rice or garlic naan.

Add ginger-garlic paste, curd, lemon juice, vinegar, coriander powder, cumin powder, red chilli powder, salt and chopped onion to the chicken.

Take butter in a hot pan, add red chilli powder to it.

Add coriander powder, cumin powder and chopped ginger to it.

Add salt, green chilli, tomato and sugar. Mix well.

Take butter in another hot pan and spread it all along the sides of the pan.

Remove the lid and check if the chicken has turned golden brown and the butter has subsided.

Add the cooked tomato gravy to the chicken and mix well.

Cover the pan again and let it cook for a while.

Now remove the lid and add cream to the gravy.

Serve hot, topped with butter, coriander leaves and green chillies.

Looks lovely but it must do wonders  for you&#039;re Cholesterol with all that butter and cream.

Far too much salt... I would add one quarter of the recommended amount, or wait and add to taste at the end of cooking.

This Authentic Indian Butter Chicken Recipe is filled with tender chunks of chicken in a savory and rich sauce that rivals restaurants in quality and taste!

Authentic Butter Chicken Recipe

Combine the chicken ingredients in a large bowl and stir until the chicken is coated completely. Cover with plastic wrap and let marinade for at least 30 minutes, up to overnight if time allows in refrigerator.

Heat 1 tbsp of oil in a large skillet over medium heat. Sear chicken pieces in oil, until browned all each side, about 3 minutes. Chicken will not get cooked through here, but later on in the sauce. Don't overcrowd the pan, you will have to work in batches, adding more oil if necessary. Set chicken aside on a plate to keep warm.

For the Chicken:

To the same pan that was used to cook the chicken, add 3 tbsp of butter and let it melt over medium heat. Toss in the onions and let cook about 5 to 7 minutes, scraping any browned bits off the bottom of the pan.

Add in the garlic, ginger, cumin and garam masala and cook until fragrant, about 30 seconds.

Stir in the tomatoes, chili powder, cayenne (if using), salt and cashews. Bring mixture to a slight simmer for about 10 minutes, until mixture turns a deep red color.

Scoop mixture into a blender and process until smooth. Pour mixture back into the skillet over low to medium heat and gradually stir in the heavy cream and sugar.

Add the chicken (and any juices) back into the sauce and bring to a simmer, stirring frequently. Finally add in the remaining 3 tbsp of butter and let it melt into the sauce as you stir. Serve warm with basmati rice, warm naan bread and enjoy!
