Avocado mushroom toast

sourdough bread

mushrooms

g feta

garlic (crushed)

butter

olive oil

edamame (shelled)

avocado

lemon juice

salt

parsley (for garnish)

Place defrosted edamame beans, avo, lemon juice and a pinch of salt into a blender

Blitz for a few seconds until roughly combined – I like to leave a little texture in the beans but you can blend until smooth if preferred

Store in the fridge until ready to use

Crushed Edamame

Chop mushrooms into even sized pieces

On medium-high heat add 1 tbsp of olive oil to a pan and place mushrooms into pan

Leave mushrooms undisturbed for 2 minutes until they start to brown

Grill bread (see below)

Toss mushrooms, add another tbsp of oil and clove of crushed garlic – cook for a further 2 minutes

Once browned add butter &amp; a pinch of salt. Toss to combine

Mushrooms

Drizzle sourdough with oil and grill on a medium-high heat for a minute or so each side until charred.  Alternatively, you can chuck them in the toaster (without the addition of oil!)

Toast

Place a spoon of edamame mix into toast, top with mushrooms, feta, drizzle of olive oil and a sprinkle of parsley

Serving

10-Minute Mushroom Avocado Toast

bread

tsp dried thyme ((or sub twice as much fresh))

red pepper flakes ((optional // for heat))

sea salt and black pepper

garlic powder

Vegan Parmesan Cheese ((optional // or nutritional yeast and flaky salt))

Heat 1 Tbsp (14 g) vegan butter or olive oil in a large skillet over medium heat. Add the sliced mushrooms, thyme, and red pepper flakes (optional). Cook, stirring occasionally, until softened and lightly browned — about 5-7 minutes. If the mushrooms are sticking to the pan, reduce the heat slightly or add more butter or oil.

Meanwhile, toast bread in the oven or a toaster.

Once the mushrooms are lightly browned, turn off the heat and stir in the salt, pepper, and garlic powder. Taste and adjust as needed, adding more salt to taste or black pepper for spice.

Top the toasted bread with ripe avocado and use a fork to smash. Then top with sautéed mushroom mixture and vegan parmesan cheese (optional). Eat, repeat, enjoy!

Best when fresh. Not freezer friendly.

So yummy...I added nuch to the avocado because I didn't have cheese. And I  used the white mushrooms that I had on hand🤤

Thanks for such a great recipe. Its absolutey the best Avocado toast ever. The sauteed mushrooms with the thyme and chilli take it to a completely different level.

Yes, please!  I just made this and loved the combination of 'shrooms with thyme and other flavorings added to my yummy avocado sandwich. I used cremini mushrooms because that's all that I had and it came out fine -- not too watery. 

It was actually more of a guacamole sandwich with lime juice added to the avocado.

Scrumptious! So simple and easy to make, but so tasty. Perfect lunch for today. Going to make it again next weekend. Loved the combo of thyme, garlic powder, and a hint of red pepper flakes. Sprinkling some vegan parm on top was a winning move, too!
