mushroom bacon

Crispy, savory-sweet vegan bacon made from shiitake mushrooms! Just 1 pan, 15 minutes, and 7 ingredients required!

Quick Crispy Shiitake Bacon

tsp oil ((if oil-free, omit))

mushrooms

maple syrup

tsp liquid smoke

tsp black pepper

tsp smoked paprika

Preheat oven to 400 F (204 C).

Heat a large rimmed oven-safe skillet (we prefer cast iron) over medium heat. Once hot, add oil, then mushrooms, tamari (starting with the lesser amount), maple syrup, liquid smoke, black pepper, and smoked paprika. Stir to coat.

Sauté, stirring frequently, for 2-3 minutes. Then transfer to preheated oven and bake for 10-12 minutes or until browned, dried, and slightly crispy.

Serve alongside vegan scrambled eggs or the perfect fried egg (if not vegan), or add to quiches, sandwiches, salads, pasta, and more!

Store cooled leftovers in a loosely covered (to allow some airflow) jar in the refrigerator for 3-4 days. Reheat in a 350 degree F (176 C) oven or on the stovetop over medium heat until hot. These are also delicious served at room temperature or even a bit cold. Best when fresh.

Quick Crispy Shiitake Bacon | Minimalist Baker Recipes

Smoky, savory, Portobello bacon. Makes a great BLT.

Portobello Mushroom Bacon – Vegan Bacon

olive oil

Portobello mushroom –

liquid smoke

sea salt

Pepper

In a bowl that is large enough to marinate the mushroom slices combine the liquid smoke, maple syrup, salt, and pepper.

Cut the mushroom into thin strips, no more than a ¼ of an inch thick, and marinate both sides in the liquid mixture. At least 15 minutes per side.

Heat the oil in a medium skillet and cook the mushrooms for approximately 5 to 7 minutes. Flip and cook for another 5 minutes. They should be browned and the edges.should be crispy.

Notes

For a Bacon Lettuce and Tomato sandwich toast two pieces of whole grain bread. Add lettuce, sliced tomato, the mushroom bacon, and salt and pepper if desired. You can also spread some vegan mayo on the toast for added flavor.

Just 5 ingredients and toss it in a skillet to fry up smoky, chewy, salty, mouthwatering vegan and vegetarian-friendly bacon. Use as a topping on soups, salads, sandwiches, pasta, pizza, or serve it with tofu scramble for a vegan breakfast.

Quick and Easy Mushroom Bacon

soy sauce

oz cremini or other type of mushrooms (sliced)

In a medium bowl, mix together the olive oil, soy sauce, maple syrup, and liquid smoke. Add the sliced mushrooms to the bowl and gently toss to evenly coat the mushrooms.

Heat a large skillet or non-stick frying pan over medium-high heat. When the pan is hot add the mushrooms and any leftover marinade. Tip: If your pan is not that large, you may want to work in batches as you will get the best results if the mushrooms are in a single layer on the bottom of the pan. Fry 5 - 10 minutes letting them get golden on one side before flipping. Try not to stir the mushrooms too much as letting them rest will allow them to really brown up. It may get a little smoky, so be sure to turn on your hood fan. Remove from the pan and enjoy!

For Fried Mushroom Bacon (the quicker method):

Preheat your oven to 375F (190C). Line a large baking sheet with parchment paper.

Spread the mushrooms slices in a single layer over the prepared baking sheet, and pour over any leftover marinade. Add to the oven and bake for 18 - 25 minutes until dark golden and reduced in size.

For Baked Mushroom Bacon:

I just made these this morning. Top of the line!! Thanks for another fantastic recipe! ❤️

why take a star away when you didn't even follow the recipe? that lowers the recipe's' overall score and it's quite deceiving because you didn't even make this recipe.

Super quick, easy, and flavorful! A nice addition to avocado toast

YUMMMMMM!!!! Can These be frozen for future soups?

I Let me tell you this is the best recipe, I am married to and have birthed the biggest carnivores on earth, next to me, of course. But I had an over abundance of mushrooms a few weeks ago and made this to keep them from wasting. I've made my husband bring home mass quantities of mushrooms every few days ever since. I love these mushrooms. I fry some real crispy and use in salads, omelets, I threw some in my lasagna, chili, I even took a big container and ate em mixed up in my cottage cheese. I love these. I use 1/4 of the olive oil called for and add an extra healthy pinch of MSG then fry in bacon grease lol. This is a staple side in my house at all times now.

We just started this vegan diet after being on Atkins and Keto for years. We do miss the meat. This really helped! We made a large pan and devoured it all within minutes! We'll go easier on them the next batch. Thank you for these! We so very much appreciate your work perfecting your recipes.

I love, love, love this recipe. A regular bake.

I made it as listed and it was yummy. I have since reduced oil to 1/2 tbsp and use homey rather than syrup. just as good. I use it on asparagus and brussel sprouts too.

You could marinate cedar chips from a guinea pig cage in this sauce and they would taste good.
