It's fast and easy to make mushroom broth! This recipe uses fresh and dried mushrooms for big flavor in just 15 minutes of simmering time. 

Quick Mushroom Broth

baby bella (aka cremini) or white button mushrooms

mushrooms (like porcini)

celery rib

carrot

water

salt

Slice the baby bella mushrooms. Chop the carrot and celery.

Add the vegetables, water, and salt to a saucepan and bring to a simmer. Simmer for 15 minutes.

Strain out the vegetables. You can save the fresh mushrooms and eat them; just add salt or sauté them in butter! Use immediately, refrigerate for 1 week or freeze in a freezer safe container for up to 6 months.

Here&#39;s a recipe for a delicious nutrient-rich super mushroom broth. You don&#39;t need any fancy or exotic mushrooms to make this recipe. The simple, reasonably-priced mushrooms you can find at your local grocery store have more nutrition than you ever imagined!

Super Mushroom Broth

lbs mushrooms, any variety

carrots,

celery

onions, any variety, unpeeled, rough chopped

ghee

2 inch fresh ginger, sliced (If not organic, peel first)

bay leaves

black peppercorns

tbs dulse flakes

chicken

white vermouth

Preheat oven to 350°F (177°C).

Place the mushrooms, celery, carrots, onions, and chicken feet on a baking sheet and dot with ghee. Roast in preheated oven for 30 minutes or until the chicken feet take on a golden color.

Transfer mushrooms, celery, carrots, onions, and chicken feet to a stock pot. If there is any liquid on the baking sheet, pour it into the stock pot.

Add the ginger, bay leaves, peppercorns, and dulse to the stockpot and pour in the white vermouth. Fill the stock pot with water to sufficiently cover the contents. (See video.)

Transfer the stockpot to the stovetop, bring the contents up to a boil, and then immediately turn the heat down to low and simmer uncovered for 6 hours.

After 6 hours, remove the stockpot from the stovetop and place it on a heatproof surface. Use a spider strainer to remove all of the contents from the liquid.

Using a funnel with a mesh strainer placed over a half-gallon jar, carefully pour the liquid into the jar. Repeat this process using a second jar until all the liquid has been poured out of the stockpot.

Allow the mushroom broth to cool slightly, then place the lids on the jars and refrigerate. The mushroom broth will stay fresh, refrigerated for one week.

You can freeze the mushroom broth in appropriate freezer-proof containers, and it will be at its optimal freshness for at least 2 to 3 months.

As to the strained solids, separate the chicken feet from the other solids. Wrap the chicken feet well and refrigerate. Use within a day or two to make chicken bone broth.

From the remaining solids, remove the bay leaves and discard them.

Using sufficient mushroom broth, purée the mushrooms and vegetables along with the broth to make a mushroom soup. Add cream or milk to create a cream of mushroom soup and warm gently on the stovetop.

Nutrient Rich Mushroom Broth Recipe

This healing vegan bone broth is made in the instant pot and ready in just 2 hours. It's nourishing, gut-friendly and tastes amazing!

Vegan Bone Broth

carrots (, chopped)

celery ribs (, chopped)

onion (, quartered)

garlic

chickpeas

- 100 g dried shiitake mushrooms

g wakame seaweed

miso paste

tomatoes

Garlic Clove

Add all the ingredients into the Instant Pot. Give it a quick stir and then put on the lid. Make sure the vent is sealed.

Set the pressure to high and set the timer for 120 minutes (2 hours). The Instant Pot will take about 15 minutes to get to pressure and then will turn on.

Once the cooking cycle is done, allow the pressure to naturally release for about 15 minutes, then turn the vent to release the rest of the pressure. Remove the lid.

Place a fine mesh strainer over a bowl and line with cheesecloth. Pour the Contents of the Instant Pot through the cloth and strainer, being sure to only capture the liquid. Discard the veggies or blend them up with some water for a soup (although it's incredibly tasty!).

Pour the vegan bone broth into jars and allow to cool to room temperature. Seal and freeze or keep in the fridge for 4 - 5 days.

To serve, either drink the broth cold or gently reheat on the stove. Taste and add a touch of salt and pepper if desired.

Instant Pot Mushroom Vegan Bone Broth

Fresh and dried mushrooms fill this easy mushroom broth with rich, umami flavor. Use it in my vegan ramen recipe, or in risottos, soups, and sauces.

Mushroom Broth

onions

olive oil

shiitake mushrooms

cremini mushrooms (halved)

garlic bulb (halved horizontally)

1- inch piece fresh ginger (halved)

mushrooms

tamari

3- inch piece kombu

Wash and dry the onions, then remove the onion skins and set them aside. Thinly slice the onions.

Heat the olive oil in a large stock pot over medium heat. Add the onions, shiitake stems, and cremini mushrooms and cook, stirring occasionally, for 10 minutes, or until the onions are soft and browned.

Add the water, onion skins, garlic bulb, ginger, dried mushrooms, tamari, and peppercorns. Bring to a boil over high heat, reduce the heat to low, and add the kombu. Cover and simmer for 1 hour. Strain and season to taste.

Put together this full-bodied mushroom stock with simple pantry ingredients in under five minutes of hands-on time and be rewarded with some of the tastiest soups, stews and sauces ever. The base recipe for this broth is very simple but very, very flavorful, and you can add in more ingredients if you&#39;d like to make it even richer.

Easy Mushroom Stock

tsp allspice berries

rosemary

sage

thyme

Place all the ingredients for the stock in a saucepan or saute pan.

Bring to a boil over medium heat. Cover the pan with a tight lid, lower heat to a simmer, and let the stock cook undisturbed for at least 30 minutes. You can even let it go longer if you have time, up to two hours.

Turn off the heat, strain and use.

Light and aromatic broth flavored with lemongrass, ginger, and mushrooms. A warming and healthy soup!

Healing Lemongrass &amp; Mushroom Broth

tbsp oil

lemongrass

tbsp thinly sliced ginger (peeled)

mushrooms (use a mix of your favorite mushrooms)

tsp salt

maple syrup

lime juice

black pepper

cilantro (for serving)

Slice the lemongrass. Cut off the green part of the lemongrass stalks and discard it. Mince one stalk and slice the remaining three stalks in halves. Slightly crush the halved lemongrass stalks using a cleaver or the side of a large knife. This will help release the natural oils of the lemongrass.

Sauté the aromatics. Heat a tablespoon of oil in a saucepan over medium heat. Once hot, add the minced lemongrass and ginger, and sautée for about 1 minute.

Add the mushrooms. Next, add the mushrooms and sauté for another 3-5 minutes.

Cover with water. Pour in water, salt, and maple syrup. For extra lemongrass flavor, add the crushed lemongrass stalks. Simmer covered for about 15 minutes. At the end of cooking, stir in the lime juice and adjust the seasonings to your liking.

Serve. Serve the broth piping hot with fresh cilantro and a crack of ground black pepper! This soup will keep for up to 4 days in the refrigerator.

Could I add beansprouts, tomato and basil to the soup..I love the combo in my soups?
