Mushroom Pesto Pasta with freshly made spinach pesto and buttery, garlic mushrooms. Fresh, tasty and easy to make you can have this on your table in just 30 minutes!

Mushroom Pesto Pasta

120 g baby spinach (4 cups)

cheese

45 g pine nuts (1/3 of a cup)

g basil leaves (1 1/2 cups)

garlic

60 ml extra virgin olive oil (1/4 cup)

tbsp lemon juice

tsp sea salt

tsp black pepper

500 g chestnut/brown mushrooms

g butter (3 1/2 tbsp) (I use real salted butter)

thyme leaves

350 g linguine (12 ounces) (You can also use, fusilli

salt

70 g sundried tomatoes

vegetarian parmesan cheese

Pine nuts

Basil leaves

Extra virgin olive oil (optional)

black pepper

Add the spinach, basil, pine nuts, grated vegetarian parmesan and minced garlic to a food processor and blend until everything is roughly blended.With the food processor running slowly pour the extra virgin olive oil into the processor. Once the oil has been incorporated stop blitzing.Add the lemon juice, salt and pepper then blitz one more time very briefly. Set aside until you are ready to use it.

Make the pesto

Melt about a third of the butter in a large frying pan, add half the mushrooms. Cook over medium heat until browned, flip the mushrooms using the pan. Once the mushrooms are brown transfer them to a bowl. Repeat with the remaining mushrooms.Once all the mushrooms are cooked return the mushrooms in the bowl to the pan along with 2 cloves of minced garlic, 1 tablespoon of fresh thyme leaves and a pinch of salt and black pepper.Toss the pan once or twice until the garlic is cooked, this should only take a minute or two.

Cook the pasta according to the packet instructions.Drain the pasta.

Add the pesto to the pasta and toss well.Next, add the sundried tomatoes and toss carefully.Serve the pasta in bowls, top with the mushrooms, some grated vegetarian parmesan, some extra pine nuts and some freshly cracked black pepper. Finish with a drizzle of extra virgin olive oil if you wish.

Inspired by Noodles &amp; Company&#39;s Pesto Cavatappi dish, this version is dairy-free and oil-free! It features tender mushrooms, tomatoes, garlic, and a creamy basil pesto sauce.

apple cider vinegar (or white vinegar)

Make the pesto or prepare this ahead of time. You&#39;ll need one batch of my homemade pesto (or 3/4 cup of your own favorite vegan pesto).

Cook pasta according to package instructions, leaving al dente (slightly firm, not mushy). Drain when finished.

Meanwhile, make the buttermilk: Add milk and vinegar to a small bowl or jar. Stir and set aside for a few minutes. It should slightly curdle.

Prepare veggies: Slice mushrooms, mince garlic, and chop tomatoes.

In a large pan over medium-high heat, sauté mushrooms for 5-7 minutes. (I use 3 Tbsp. water/broth for no-oil sauté method, adding more as needed.)

When mushrooms are softened, add garlic. Stir and sauté 1 minute.

Add tomato and buttermilk mixture. Stir and cook 3-4 minutes.

Decrease heat to low. Add pasta (cooked &amp; drained) and pesto. I use the full batch of pesto for extra-bold flavor, but add less if preferred.

Stir well to combine and heat for 2-3 minutes. Salt and pepper to taste. Serve with vegan parmesan if desired.

Easy Mushroom Pesto Pasta Recipe

(280 grams) pasta

(170 grams) cremini mushrooms

olive oil

thyme

oregano

red pepper flakes

Boil

Add a tablespoon of salt to a large pot of water and bring it to a boil.

Add 10 ounces (280 grams) pasta to the boiling water.

Cook

Cook al dente (for about 10 to 12 minutes depending on the type of pasta).

Drain

Reserve ½ cup of pasta water. Drain the pasta.

Cover

Bring the pasta back to the pot and keep it covered for 5 minutes.

Make pesto

Slice

Slice 6 ounces (170 grams) cremini mushrooms and mince 5 cloves garlic.

Heat

Heat 2 teaspoons olive oil in a large skillet. Add sliced mushrooms and sauté. Stir on medium heat until they start to brown.

Add minced garlic, ¼ teaspoon dried thyme, ¼ teaspoon dried oregano, ½ teaspoon red pepper flakes, ½ teaspoon black pepper and ½ teaspoon sea salt.

Simmer

Add the reserved pasta water. Simmer until most of the moisture evaporates.

Finish

Finish with 2 teaspoons fresh lemon juice and remove from heat.

Cook garlic mushrooms

Toss

Add ½ cup pesto to boiled pasta and toss.

Add garlic mushrooms, ¼ cup sundried tomatoes, 2 tablespoons Parmigiano Reggiano (grated) and 2 tablespoons chopped Italian parsley to the pesto pasta.
