A simple healthy vegan recipe for Mushroom Toast with Spinach, Garlic, Thyme and Lemon zest. Serve it as a meal with a hearty salad, or top it with an egg for breakfast. A great way to use up sourdough bread!

Mushroom Toast

olive oil (or sub with 1/2 butter

garlic cloves- sliced, or rough chopped (not too small)

shallot – sliced

salt and pepper

thyme (or sage or rosemary)

lemon zest of 1 small lemon

baby spinach leaves

Heat oil over medium heat. Add shallots, garlic and mushrooms, add salt and pepper and saute, stirring until mushrooms release their liquid, lowering heat to medium-low- if necessary to prevent shallots from getting too dark.

Cook-off all the mushroom liquid and let them get nice and golden and slightly crispy on the edges. Add the thyme, wine and lemon zest and cook off the wine, about 2 minutes.

Toss in the spinach, letting it wilt, adding more if you like.

Taste and adjust the salt and pepper according to your taste.

If the mixture seems dry you could drizzle with a little more olive oil, which will nicely coat the toast.

If using truffle oil, drizzle it now, or top with an optional poached egg or a little grated pecorino if you like.

So simple but so good. Perfect for a quick dinner.

Easy creamy mushroom toast

500 g (+- 1lb) mushrooms

garlic

tsp chilli/red pepper flakes

tsp dried oregano/thyme

tbsp butter

lemon

parsley (for serving)

bread

cream cheese ((optional))

Heat a large frying pan over high heat then add a tablespoon or two of olive oil.&nbsp;

Fry the mushrooms in batches, until well-browned all over.&nbsp;

Add all the mushrooms back to the pan with their resting juices and add the garlic, herbs and chilli flakes. Cook for 1-2 minutes.&nbsp;

Add the butter and lemon juice and stir well while the butter is melting to create a creamy sauce then take off the heat. Season to taste.&nbsp;

Serve the creamy mushrooms on toast smeared with cream cheese (optional).

Easy Mushrooms on Toast Recipes (Three Versions)

baby bella mushrooms

olive oil

unsalted butter

salt

black pepper

avocado

lemon juice (optional)

sautéed mushrooms (to taste)

chili pepper (thinly sliced (or 1/4 teaspoon crushed red pepper flakes))

blue cheese

honey

mustard

cheddar cheese (1/4 cup)

thyme leaves

Heat half of the olive oil (1.5 teaspoons) in a 12-inch cast-iron skillet over medium heat.

Add half of the mushrooms (work in batches so pan is not overcrowded). Cook 5 minutes, undisturbed. Stir and cook another 3 to 5 minutes. Transfer cooked mushrooms to a plate and set aside. Continue cooking second batch, adding remaining 1.5 teaspoons of olive oil and mushrooms.

Once second batch of mushrooms are cooked, add all mushrooms back to the skillet, stir in butter and a pinch each of salt and black pepper.

How to Cook Mushrooms

Toast bread and (gently) rub with a clove of peeled garlic.

In a bowl, mash avocado. Spread avocado on toast. Note: Add a tablespoon or so of lemon juice if you like here. Also, if you prefer to simply slice the avocado instead, that&#039;s okay too.

Top avocado with cooked mushrooms and chili pepper. Serve and enjoy!

Spread with blue cheese. Top with cooked mushrooms and drizzle with honey. Serve and enjoy!

Spread mustard over bread.  Top with cheese. Broil in oven for a minute or just until cheese is melted.

This mushroom hummus toast is a twist on your usual breakfast. It's savoury, filling, and so easy to make!

Mushroom Hummus Toast

sourdough bread,

tbsp hummus (0.13)

olive oil (0.02)

whole brown button mushrooms (0.18)

thyme

½ tsp rosemary (0.02)

tsp liquid aminos (0.06)

Sea salt and pepper

Microgreens (0.02)

Hot sauce of choice (0.02)

Heat your oil in a frying pan on medium. In the meantime, slice mushrooms thinly.

Once the oil is hot, add the mushrooms and sauté for 2-3 minutes.

Add in rosemary, thyme, and liquid aminos. Sauté for another 2-3 minutes, or until tender. Season with salt and pepper to taste then set aside.

In the meantime, toast your bread and add a generous layer of hummus on top.

Top hummus with mushrooms and garnish with microgreens or hot sauce. Serve immediately.

Avocado mushroom toast

mushrooms

g feta

garlic (crushed)

butter

edamame (shelled)

lemon juice

parsley (for garnish)

Place defrosted edamame beans, avo, lemon juice and a pinch of salt into a blender

Blitz for a few seconds until roughly combined – I like to leave a little texture in the beans but you can blend until smooth if preferred

Store in the fridge until ready to use

Crushed Edamame

Chop mushrooms into even sized pieces

On medium-high heat add 1 tbsp of olive oil to a pan and place mushrooms into pan

Leave mushrooms undisturbed for 2 minutes until they start to brown

Grill bread (see below)

Toss mushrooms, add another tbsp of oil and clove of crushed garlic – cook for a further 2 minutes

Once browned add butter &amp; a pinch of salt. Toss to combine

Mushrooms

Drizzle sourdough with oil and grill on a medium-high heat for a minute or so each side until charred.  Alternatively, you can chuck them in the toaster (without the addition of oil!)

Place a spoon of edamame mix into toast, top with mushrooms, feta, drizzle of olive oil and a sprinkle of parsley
