Jeremy Pang&#8217;s nasi goreng

medium free-range eggs,

garlic clove, finely chopped

½ red pepper, finely chopped

asparagus spears,

cooked rice,

Vegetable oil

Finely chopped spring onion

For the sauce

tsp sambal (see Tips below)

tomato purée

½ tbsp light soy sauce

tbsp kecap manis (sweet soy sauce)

½ tsp sesame oil

Mix the sauce ingredients in a small bowl and season.

Build your Wok Clock*: start at 12 o’clock with the eggs, then the garlic, red pepper, asparagus, rice and lastly the sauce.

Heat 2 tbsp vegetable oil in your wok over a high heat. Once smoking hot, pour the eggs into the oil and allow to bubble up before breaking them up and scrambling. Push the eggs to the back of the wok, then add the garlic, red pepper and asparagus, stir-frying for 30 seconds between each new ingredient.

Push all the veg to the back of the wok, add ½ tbsp vegetable oil and bring to smoking point before adding the rice. Break up any clumps of rice by pushing down on them against the wok with a spatula or ladle. Fold the vegetables and egg into the rice to combine and stir-fry for 1-2 minutes, then pour the sauce over the rice and stir-fry for 2 minutes more. Some of the rice should begin to crisp up for texture and flavour. Garnish with spring onion and serve.

Nasi Goreng (Indonesian Fried Rice)

coconut oil

500 g chicken breast, finely chopped

eggs

g ginger, crushed

g garlic, crushed

onion,

red chilli, sliced

tbsp kepcap manis*

tbsp fish sauce

Spring onions,

Cucumber,

Heat the coconut oil in a wok on a very high heat until it begins to smoke.

Add the chicken and fry until golden brown.

Move to the edge of the wok and add the garlic, ginger, onion and chilli. Lightly fry for a minute.

Add the eggs and let them sit for 30 seconds or so, without moving them. Partially mix, then let them set again, repeat this a few times until they're cooked though. If you just mix them straight into the mixture they won't cook properly and will go all weird.

Add the chilled, cooked rice, fish sauce and the kepcap manis. Fry, mixing continuously for 2-3 minutes.

Serve. Garnish with a fried egg on top, cucumber and spring onions

Cooked this for hubby for the first time last night... so quick and easy and tasted amazing. Will definitely be making this on a regular basis!

Made the Nasi Goreng a couple of times, a real firm favourite and very easy to make.

Could olive oil be used instead of coconut oil ?

Tried this last week minus the fried egg and used soy sauce/honey instead of kecap manis. It was delicious 😋
