Nihari Masala

Bay leaves – 8

Cinnamon – 6-6 3″

Nutmeg – 1/2 piece

Star Anise – 2

Green Cardamom – 20

Black pepper – 40

Cloves – 25

Dry Ginger – Saunth 6″ piece

Fennel Seeds – 1.5 Tbsp

Coriander Seed – 3 Tsp

Black Cumin – 1 Tsp

Cumin Seeds – 2 Tsp

Combine and grind all ingredients to make a powder in grinder.

Nihari Masala Powder is ready to add in Nihari

I&#039;ve tested the recipe with the fewest ingredients. Anything that can be skipped is marked with *(star). Find measures for coversion of whole spices to ground in notes.

Nihari Masala Recipe (spice mix)

coriander seeds

fennel seeds

cumin seeds

black cumin (sub with cumin)

black pepper

cinnamon stick (broken)

nos black cardamom

nos green cardamom*

bay leaf*

½ flower star anise*

long pepper ((piply) sub with 6 black pepper)

Kashmiri chilli powder (for color)

red chilli powder

turmeric powder*

salt

Take whole spices in a pan and dry roast for a minute on medium heat.

Add powdered spices, and roast another for 2-3 seconds. Remove from heat and transfer to a food processor. Grind into a fine powder.

Sieve the spice mix through a fine strainer. Discard the remains.

You&#39;ll need 2 tablespoons of this spice mix for 500 kg chicken nihari. And about 2-3 tablespoon for 1/2 kg beef Nihari. Add more after the taste test.
