Add a burst of umami flavour to your favourite dishes with nikumiso! This easy Japanese miso meat sauce features a flavour-packed blend of pork mince and mushrooms simmered to perfection with classic Japanese seasonings.

Nikumiso - Japanese Pork and Miso Sauce

tbsp red miso paste

tbsp sugar

soy sauce

tbsp cooking sake

tsp garlic

tsp ginger

vegetable oil

250 g pork mince (8 oz)

mushrooms (finely diced)

water (100 ml / 3.4 fl oz)

spring onion / green onion (optional extra topping, sliced thinly)

Place the red miso paste, sugar, soy sauce, cooking sake, garlic and ginger in a small bowl and mix well to form a sauce paste.

Heat the vegetable oil in a large frying pan over high heat. Add the pork mince and fry until browned, around 3 minutes.

Add the mushrooms and fry for 1-2 minutes until softened.

Reduce

Reduce the heat to medium-low, then add the sauce paste and water. Stir through and cook for a further 3-5 minutes until the sauce has thickened.
