Fancy a souvlaki with none of the fuss? Just bung it in the air fryer and you'll have a deliciously Greek-inspired midweek dinner in no time at all.

Air Fryer Lemon & Garlic Chicken Hummus Bowls with Tomato & Mint Salsa

Boneless Skinless Chicken Thigh

Flatbread

Hummus

Vine Tomato

Bell Pepper

Fennel

Lemon

Garlic Powder

Mint

Oregano

Red Onion

Sumac

Lemon Wedge

Black Pepper

Get your chicken into a bowl and squeeze in the juice of ⅔ of the lemons and half the olive oil. Add the oregano and garlic powder then season with salt and pepper. Dice the peppers, then add to the chicken bowl. Cover and set aside in the fridge whilst you get on with everything else.

Finely slice the fennel and add to another bowl. Squeeze in the juice of half a lemon and add the sumac before seasoning with salt and pepper.

Halve the tomatoes and scoop out the seeds, then finely dice. Finely chop the mint and onion, then tip into a bowl along with the tomatoes. Squeeze in the juice of the remaining lemon with a splash of olive oil and season with salt and pepper. Set aside.

Add the marinated peppers to the air fryer, then top with the chicken. Turn the air fryer on to 200°C and cook for 10 mins, then flip the chicken and cook for a further 5 mins, or until the chicken is charred and the juices run clear. 

Heat up the flatbreads. You can do this in the air fryer at 160°C for a few minutes.

Dollop a swoosh of hummus into two bowls, then add the fennel salad, chicken and peppers. Spoon over the juicy tomato salsa and a few more mint leaves (plus lemon wedges), if you like. Scoop everything up with your warm flatbreads and enjoy. 

Decent simple mid-week mediterranean meal! Would also recommend longer cook time on the air fryer. Tomato mint combination and fennel+sumac combination are great!

Can’t get hold of fennel is there anything I can substitute

Loved it! Chicken needed slightly longer in the air fryer - but delicious! Can also use a greek mix for the chicken if lazy.

Air Fryer Chicken Tikka with Spiced Rice

Greek Yoghurt

Tikka Masala Paste

Microwave Rice

Green Chilli

Nigella Seed

Salt

Cucumber

Finely slice the red onions. Add ½ of the sliced onions to a bowl with the juice of ¼ of the lemons and season with salt. Leave to quickly pickle while you prep the rest of the dish. Cut ⅓ of the remaining lemon into wedges and set aside for garnish.

Slice the chicken thighs into three pieces. Add to a bowl with the juice of ½ the remaining lemon, the yoghurt and tikka paste. Season generously with salt and pepper, then mix well. Cover and set aside in the fridge for at least 30 mins. 

Meanwhile, make the raita. Halve the cucumber lengthways and scoop out the seeds before finely dicing. Finely chop the mint. Add the yoghurt to a bowl and squeeze in the juice of the remaining lemon. Add the cucumber and mint to the bowl and season with salt and pepper. Set aside.

Add the rest of the onions to the air fryer, drizzle with a glug of olive oil and top with the chicken pieces, then add another small drizzle of oil. Set the air fryer to 200°C and cook for 14-16 mins until charred and the chicken juices run clear. 

Finely slice the green chilli and cut the tomato into wedges. Add the tomatoes to a bowl along with the nigella seeds, then season with salt and pepper.

Cook the rice according to package instructions.

Remove the chicken from the air fryer, then toss the cooked onions with the rice. Season with salt and pepper. 

Divide the rice between two plates, add the tomatoes, then top with the tikka chicken and pickled onions. Scatter with the green chilli, lemon wedges and more mint, if you like. 

This is the first Mob recipe that I have made and it was a hit with the whole family. It was delicious and so easy to make.  I also loved that you could add / leave out elements to suit the kids and grown ups. Big fan!

Can I marinade and freeze chicken befor me it’s cooked? or is there a better method?

this recipe was so good that my man licked his plate afterwards. I would say depending on the Tikka brand you might want to add salt to the chicken as well. 

Given that the primary flavor of this dish is the tikka - what paste brand are you using? I'm in the US, what should I look for?

I really dislike "25 min cooking time" and then adding a single step of "put in fridge for 30 min". Please, be honest about cooking time and prep time.

very popular with my wife and kids (6 and 8). easy to make and amazing variation in tastes and textures. only thing id say to be careful is that the recipe asks to season each element with salt and pepper so id not go too heavy handed on the salt.

Loved this! What was left of the marinade we cooked and use as extra sauce. It was really straightforward and rather quick! Once I had the chicken marinating (had it in the fridge for a few hours), everything else was quick to put together. Will defo make this again.

Great recipe but I find it frustrating when I have to do mental calculations while cooking. I need to calculate 1/4 of the total lemons, then 1/3 of the remaining lemon, then 1/2 of the remaining lemon after that, then finally the remainder of the lemon. Surely there’s an easier way to write this!

Loved this recipe. I only used one onion and one lemon and thought it was enough. Could use less Greek yoghurt for the raita as well, but these amounts leave plenty for leftovers!

This was so good! Definitely revisiting it again. One onion was plenty though and I don’t know if i can get nigella seeds in Australia.
