This easy, no-bake energy bites recipe is vegan, gluten-free, and bursting with lemon flavor! Dates, cashews, oats, lemon and poppy seeds are the main ingredients. Perfect healthy snack or dessert!

Lemon Poppy Seed Energy Bites

Medjool dates (pitted)

oats

raw cashews

Tablespoon warm water

lemon juice

Add dates to a processor and pulse a few times until dates are finely chopped.

Add oats, cashews, water, lemon juice, lemon zest, and salt. Process until the mixture resembles a sticky dough. If the dough is too wet, add some more cashews or oats. If the dough is too dry or crumbly, add more warm water 1 teaspoon at a time.

Transfer mixture to mixing bowl and fold in poppy seeds. Using a cookie scoop or spoon, scoop out mixture and roll into balls.

Leftovers keep 7-10 days in the fridge.

Easy 5-ingredient no-bake vegan dessert or snack

No-bake Peanut Butter Bars

Maple Syrup (or any liquid sweetener like brown rice syrup

3.5 oz Vegan dark chocolate (70%-85%)

Cover a 9-inch x 5-inch rectangle baking dish with parchment paper. Set aside.

In a medium-sized mixing bowl, stir peanut butter and maple syrup until evenly combined and smooth.

Stir in coconut flour. The dough will get thick, dry, and difficult to stir with a spatula, so use your hands to knead the dough and form a ball.

Evenly press the peanut butter dough ball all over the prepared pan. You want to fully cover the pan in an even layer of peanut butter dough. Smoothen the top of the layer using the back of a spoon.

Freeze while you prepare the chocolate ganache.

In a small mixing bowl, add the pieces of 70% vegan dark chocolate with melted coconut oil and peanut butter.

Melt under bain-marie or in the microwave by 30-second bursts, stirring between to prevent the chocolate from burning. It is ready when all the chocolate is melted, and the mixture is shiny and smooth.

Remove the baking dish from the freezer and pour the chocolate ganache over the peanut butter layer.

Spread evenly with a spatula.

Return the pan to the freezer for 10 minutes or until the chocolate ganache is set.

Slice the whole batch into 16 peanut butter bars.

Store bars in the fridge in an airtight container for 1 week or freeze. Defrost 2 hours before eating at room temperature or enjoy half frozen. Note that the peanut layer dries out slightly after freezing. The texture will be closer to a shortbread be still delicious.

These 6-ingredient no-bake granola cups are filled with creamy nut/seed butter and are packed with flavor and nutrients, perfect for breakfast, snack, or dessert! They’re also highly customizable, gluten-free, low-sugar, and vegan!

Granola Cups

granola

sunflower seeds (chopped (see notes))

tbsp agave syrup ((or maple syrup))

sunflower seed butter ((melted)

dairy-free chocolate chips ((or dark chocolate, chopped))

I recommend measuring the ingredients in grams on a kitchen scale. You can watch the video in the post for visual instructions.

First, combine all the granola cup ingredients in a bowl and stir with a spoon or your hands. Alternatively, use a food processor. The mixture should stick together when pressed between your fingers. If it doesn’t, add a little more liquid sweetener until it does.

Then, grease a cupcake tin or silicone mold with cooking spray, and divide the mixture between the holes (this recipe yields 6-8 cups depending on the size of the pan).

Use the back of a tablespoon measuring spoon (or a shot glass) to press the oat mixture firmly into the pan and make a ‘cup’ dent in the center of each.

Then, place a heaped teaspoon of the nut or seed butter of your choice into the center wells of each granola cup and transfer it to the freezer for about 60 minutes.

Then, melt the dairy-free chocolate chips in a microwave or over a water bath, optionally with 1-2 teaspoons of coconut oil, and pour this over each granola cup (it will solidify quickly). Remove them from the tray, and enjoy!

No-Bake Brownies (Vegan)

Line a 9-inch x 5-inch loaf pan with parchment paper. Set aside.

In a food processor with the S-blade attachment, add all the ingredients: peanut butter, maple syrup, almond milk (make sure the almond milk is at room temperature. If just out of the fridge, it solidifies the peanut butter and won&#39;t come out as good), unsweetened cocoa powder, flaxseed meal, and coconut flour.

Process on medium speed until all the ingredients come together and form a consistent brownie batter. It shouldn&#39;t take more than 30 seconds. The dough will be dark, sticky, and thick. That is what you want. If it looks very dry, which can happen if you did not measure the flour precisely, add 1 extra tablespoon of almond milk. Process again.

Gather the brownie batter with your hands. It is sticky, so you can wet your hands to make this easier. Transfer the no-bake brownie batter onto the prepared loaf pan and press to flatten using a silicone spatula. Freeze for 5-10 minutes. Meanwhile, prepare the frosting.

In a small microwave-safe bowl, add coconut oil and chocolate chips

Microwave for 30 seconds, stir, and repeat until melted. Pour on top of the brownie bar.

Place the no-bake brownie in the freezer for 10 minutes to harden the chocolate layer

Cut into 8 squares.

Chocolate Frosting

Store in an airtight container in the fridge for up to 2 weeks.
