Homemade Tigernut Granola (Nut Free, Gluten Free, Keto, Paleo, Vegan, Dairy Free &amp; Oil Free) – A crunchy nut free granola cereal made with tigernuts and a mix of seeds like pumpkin, chia and hemp seeds. This gluten free nut free grain free granola is delicious on its own or served with dairy free milk, yogurt, smoothie or ice cream. 

Gluten Free Nut Free Tigernut Granola (Grain Free, Oil Free, Keto, Vegan)

tigernuts ((chopped))

tigernuts ((sliced))

sunflower seeds (raw)

pumpkin seeds (raw)

golden flax seeds ((ground))

currants

cranberries (or raisins (soaked))

hemp seeds

chia seeds

coconut cream

sugar

tsp vanilla extract

tsp pink Himalayan salt

raspberries (crushed)

freeze dried bananas (crushed)

Take 1.3 cup of tigernuts and soak them in a bowl of water overnight.

Soak the dried black currants or any of your dried fruit in warm water for at least 30 minutes before use in the recipe. This will help remove dirt and any oil or sugar residue.

Prepare The Ingredients That Need Soaking

Once soaked discard the water, place the tigernuts in a food processor and pulse a few times until they resemble chopped nuts.

You can also thinly slice them with a knife if you prefer larger pieces.

Chop And Slice

Preheat oven to 300F. Line a baking tray with parchment paper.  

Into a large bowl toss chopped and sliced tigernuts, sunflower seeds, pumpkin seeds, chia seeds, hemp seeds, flaxseed meal, dried black currants, coconut cream (room temperature) or oil, the sweetener (if you use any) and salt.

Use a spatula to stir and combine.

Spread your grain free nut free granola mixture evenly on the prepared baking tray. Spread the granola in a single thin layer or use two baking trays if needed.&nbsp;

Assemble The Gluten Free Nut Free Grain Free Granola

Bake for 40 minutes, stirring halfway through with a spatula. Your grain free granola is ready when is slightly golden brown and crisp.

Bake The Granola

Cool down for 15 minutes on the tray then stir in the dried freeze fruits (I used raspberries and bananas).

Final Mix-ins

Transfer your cool granola into a glass jar.  Store up to 3-4 weeks. This recipe makes about 4-5 cups of granola.

Gluten Free Grain Free Nut Free Granola Recipe (Keto, Low Carb, Paleo, Vegan, Nut Free, Dairy Free & Oil Free)

This Tahini Cardamom Granola is incredibly crunchy and bursting with flavor, but it's Oil Free and made with only 9 plant-based ingredients! A perfect On-The-Go Breakfast or tasty Snack.

Crunchy Tahini Cardamom Granola 

Tahini*

Maple Syrup

Rolled Oats, GF

Pumpkin Seeds

Sunflower Seeds

tsp Vanilla Extract

Cardamom

Cinnamon

Salt

Cranberries (or other dried fruit of choice)

Preheat the oven to 325F. Add the Maple Syrup, Tahini, Cardamom, Cinnamon, Vanilla Extract, and Salt to a large bowl. Whisk well.

Next, add the Rolled Oats, Pumpkin Seeds, and Sunflower Seeds to the bowl. Fold the Dry ingredients into the Wet until everything is evenly incorporated and moist.

Transfer the Granola to a lined or greased Baking Tray. Bake in the bottom rack of the oven for 20 minutes, then gently &#8220;flip&#8221; the Granola by breaking it apart with a spatula. (Note: break it into small or large clusters according to your preference!) Return to the oven and bake for an additional 5-7 minutes.

Remove from the oven, sprinkle the Cranberries over the Granola, and let cool completely on the tray.

Once cool, store in an airtight container at room temperature for up to one month. Serve as desired.

Made this on Sunday night. First time I ever made homemade granola. It is SOOOO good! Finished it today. Make more tonight! I'm going to add more tahini, vanilla, cardamon, and cinnamon as I want heightened flavor. Will keep you posted. Thank you! xo

I've been making homemade granola for years and I have to say this was one of the best recipes I've ever found! It was so delicious with just the right amount of sweetness! I am guilty of eating tahini straight out of the jar so I loved that this recipe incorporated that. The next time I make it I would probably up the amount of cardamom by maybe 1/4 of a teaspoon just for an extra bit of spice.

WOW!!  Amazing granola.  I added a bit of unsweetened coconut flakes in place of some oatmeal, hemp seeds for 1/4 cup sunflower seeds and sprinkled about 1/4 cup collagen protein over before mixing.  I also used unsweetened dried cherries and a bit of fresh ground nutmeg.  Thank you for such a delicious combo of flavors.

Perfect ratio of wet to dry ingredients! The contrast between the savoury tahini flavour and the sweet craisins is incredible and makes this recipe stand out. Pressing the granola down with a spatula and flipping it 20 mins in is a game changer for getting crispy chunks.

I don't usually leave comments but this is DELICIOUS!! Such a creative mix of flavors that go together so well! I used chopped pecans instead of sunflower seeds and left out the cranberries, and it was *chef's kiss*. Thanks for the great recipe!
