These oatmeal pancakes are light and fluffy with a boost of protein as a healthy alternative to regular breakfast pancakes! Just add toppings!

Family Favorite Light and Fluffy Oatmeal Pancakes

oats

milk (regular

eggs

unsalted butter (plus more for cooking)

sugar

all-purpose flour

baking powder

salt

cinnamon (optional)

Whisk 1 cup rolled oats and 1 cup milk in a large bowl. Let stand for 10 minutes for the oats to soften. Meanwhile, melt 1 tablespoon of unsalted butter and set it aside to cool.

Add the butter, 2 eggs, and 1 tablespoon of granulated sugar to the oats and whisk to combine. Add 2/3 cup all-purpose flour, 2 teaspoons baking powder, 1/4 teaspoon kosher salt, and 1/4 teaspoon ground cinnamon, if desired, and whisk until combined; do not overmix. Let stand for 5 minutes more. Meanwhile, heat a large cast iron or nonstick skillet over medium-high heat.

Add 1 teaspoon butter to the pan and swirl to coat. Drop the batter into the pan in 2-tablespoon portions, cooking 3 at a time. Cook until bubbles appear on the surface, the edges begin to look dry, and the bottoms are golden brown, about 3 minutes. Flip the pancakes and cook until the other side is golden-brown, 2 to 3 minutes more.

Transfer the pancakes to a warm oven or plate. Repeat cooking the remaining batter, using 1 teaspoon of butter for each batch.

These pancakes were amazing! I made them for the kid's breakfast this morning and they just loved them. I can't wait to make them again!!

We made this for our Father's Day Brunch; everyone raved about the taste and texture. I didn't tell them that the pancakes were also good for them. I'm making the pancakes again for our houseguests next weekend.

This combines two of my favorite pancakes + oats and looks sooooo delicious!!! Makes for a perfect healthy &amp; nutritious breakfast. I loved reading all the tips n tricks and saving to try the recipe soon.

I  always  have some  oats on hand in the pantry so  these are going on  my menu for  next week!

I love that this pancake recipe is more substantial with the oatmeal and is still light fluffy and delicious. Highly recommend especially if you are looking to add some fiber to your breakfast.

Creamy Amaranth Porridge: A Cozy Vegan Breakfast Delight

Amaranth (Substitute with quinoa if needed.)

Water (Vegetable broth can be a tasty alternative.)

Milk (any type) (Use almond or oat milk

Maple Syrup

Salt (Optional

Sliced Apples (Adds crunch and sweetness.)

Berries (Nutrient-rich topping.)

Chopped Nuts (Use almonds or walnuts.)

Yogurt (Adds creaminess.)

In a small saucepan, add ½ cup of amaranth and 1½ cups of water. Bring it to a gentle boil over medium heat.

Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 30 minutes, stirring occasionally.

After the amaranth has become tender, stir in ¼ cup of your chosen milk and your sweetener along with a pinch of salt.

Mix vigorously until the porridge reaches a creamy consistency, then serve hot.

Top with sliced apples or berries for extra flavor.
