An easy cherry loaf cake that's moist and tender with ground almonds that just needs a cup of tea. Remember to coat the cherries in a little flour so they don't all sink to the bottom of the cake. 


Easy cherry cake

natural coloured glacé cherries

plain flour

175 grams/6 ounces caster sugar, plus 1½ tbsp

free-range eggs

tsp vanilla extract or almond extract

tsp finely grated lemon zest

flour

1½ tsp baking powder

salt

75 grams/2½oz ground almonds

tbsp milk

A twist on the classic flavours of cherry Bakewell tart, this cake is perfect as a teatime treat. For this recipe, you will need a 20cm/8in round springform tin.

Cherry Bakewell cake

glacé cherries

175 grams/6 ounces plain flour, plus 2 tsp

175 grams/6 ounces unsalted butter,

caster sugar

vanilla bean paste

almond extract

½ unwaxed lemon, finely grated zest only

eggs,

100 grams/3½oz ground almonds

grams/1¾oz marzipan, cut into 5mm/¼in dice

unsalted butter, melted

grams/1½oz plain flour

grams/1½oz light brown soft sugar

grams/1½oz almonds

½ lemon, juice only

grams/3½oz icing sugar

glacé cherries, halved

This delicious afternoon cake is best served with a hunk of cheese and a hot cup of tea.

Dundee cake

175 grams/6 ounces softened butter, plus extra for greasing

brown sugar

orange marmalade

heaped tsp ground mixed spice

75 grams/3 ounces glacé cherries, halved

tbsp whisky or milk

This dense and fudgy brownie recipe adds chocolate hazelnut spread into the mix as well as crunchy toasted hazelnuts.

Gooey chocolate hazelnut brownies

grams/3½oz plain flour

cocoa powder

¾ tsp baking powder

300 grams/10½oz dark chocolate, at least 70% cocoa solids

butter

sugar

100 grams/3½oz hazelnuts, roughly chopped

grams/3½oz chocolate hazelnut spread (optional)

milliliters/2fl oz hazelnut liqueur (optional)

Although I first came up with this recipe because I had someone coming for supper who –genuinely – couldn’t eat wheat or dairy, it is so meltingly good, I now make it all the time for those whose life and diet are not so unfairly constrained, myself included.

A low-FODMAP serving is one small slice. If gluten-free flour is used to replace the ground almonds, this cake is ok for low-FODMAP diets. Make sure to check if your gluten-free flour is low-FODMAP, for example coconut flour is not.

150 milliliters/5fl oz regular olive oil,

cocoa powder, sifted

milliliters/4fl water

tsp vanilla extract

150 grams/5½oz ground almonds or 125 grams/4½oz plain flour (a gluten-free if required

½ tsp bicarbonate of soda
