This blueberry crumble, easy to make with blueberries and a buttery oat cookie topping, is simple, easy, and the best blueberry dessert we can imagine. Simple and spectacular. Better make a double batch.

Blueberry Crumble

(about 1 pint) fresh blueberries

sugar

all-purpose flour

lemon juice (depending on how tart the blueberries)

salt

oats

brown sugar

vanilla extract

Vanilla ice cream (preferably homemade)

Preheat

Preheat the oven to 375°F (190°C). Adjust the oven rack to the center position. Generously butter a 9-inch pie plate.

Prepare the oven and pan

Combine

Nibble a blueberry or three to determine how sweet or tart it is. Toss the blueberries with the sugar, flour, lemon juice, and salt, adjusting the amount of lemon juice according to the relative sweetness or tartness of the berries. Dump the berries into the pie plate.

Make the blueberry filling

In a large bowl, stir together the flour, oats, brown sugar, vanilla, and salt. Blend in the butter, using your fingertips or a pastry cutter, and mix until well combined. Crumble the topping over the berries in clumps of varying sizes.

Bake

Bake the blueberry crumble until the berry filling is bubbling and the crisp oat topping is set and browned in places, 25 to 35 minutes. Let the crumble cool a little (but not a lot) before spooning it onto plates or into dishes and serving it warm with a scoop of ice cream plopped on top or on the side or wherever you choose.

Apple Cookies w/ Streusel Topping and Caramel Recipe

apples (peeled, cored, and diced (About 2 cups))

lemon juice

butter (2 sticks - softened)

eggs

baking soda

cinnamon

caramel baking pieces

butter

old fashioned oats

water

Peel, core, and dice apples and toss in lemon juice and put in the refrigerator until needed.

In a large mixing bowl, cream together butter, brown sugar, and granulated sugar (you can use a fork or a hand mixer).

Add in eggs and vanilla and mix well until smooth.

Slowly stir in flour, baking soda, salt, and cinnamon until combined.

Use a paper towel to pat the apples dry and fold apples and caramel pieces into cookie batter.

Chill dough for 30 minutes in the refrigerator.

While your dough is chilling, preheat your oven to 375 degrees and make the crisp topping.

Using a fork, pastry cutter, or your hands, combine the butter, brown sugar, unbleached flour, and oats until crumbly. Set aside.

Using a cookie scoop, create 1” cookie balls with your dough (dough will be sticky).

Roll the cookie balls in the crumb topping before placing them 2” apart on baking sheets that have been lined with parchment paper.

Bake for 12-13 minutes until the center of the cookie is set. Do not over bake.

Let the cookies cool on the baking sheet for 5-10 minutes before moving them to a cooling rack to cool completely.

For the glaze, combine powdered sugar and water until a smooth glaze forms. You can add more/less powdered sugar or water to get the consistency you want.

These apple cookies are beyond delicious and so easy to make. I'll definitely be adding this to my regular baking rotation.

Easy Apple Crisp Recipe with Oats (Creamy &amp; Crispy)

Granny Smith apples (peeled and sliced thin)

2-3 (200 grams) sweet apples (such

brown sugar, packed

white sugar

tbsp all-purpose flour

heavy cream

vanilla bean paste

nutmeg

allspice

¼ tsp ground ginger

½ tsp fine sea salt

light brown sugar, packed

¼ tsp cinnamon

+ 2 tbsp cold salted butter (cubed)

½ tsp vanilla bean paste

pecans

Preheat oven to 350°F (177°C). Lightly grease a 13x9-inch baking dish.

In a large bowl, whisk heavy cream, yolk, both sugars, flour, vanilla, spices, salt, and lemon juice until smooth. Add apples and toss to coat. Pour the apples and  all of the luscious sauce into your baking dish.

Apple Filling:

Combine flour, oats, brown sugar, salt, and cinnamon. Cut in cold butter until clumpy and coarse, then mix in vanilla bean paste and nuts if using. If you squeeze the mixture together it should come together to large clumps.

Squeeze the topping into small clumps, then scatter them generously over the apples, covering the surface completely.

Bake 50–55 min, until bubbling at the edges, golden brown on top and the apples are tender.

Cool 15 min before serving so the sauce thickens slightly but stays silky. Enjoy!

Super yummy.  I did have to bake longer than recipe but once it came out and cooled, it was AMAZING!  Definitely have with vanilla bean ice cream!  Yum!
