An easy and super healthy make-ahead breakfast that your family will love!

Brownie Baked Oatmeal

oatmeal (quick or rolled oats work)

ground flaxseed (or more oats)

baking powder

salt

cocoa powder

cinnamon

coconut oil

pumpkin puree

milk

eggs

vanilla

dark chocolate chips

Whisk together the dry ingredients (the first six ingredients, through cinnamon) in a large bowl.

In another bowl, whisk together the wet ingredients (honey, coconut oil, pumpkin, milk, eggs, and vanilla).

Pour the wet ingredients into the dry ones. Mix well. Optional: Stir in the chocolate chips.

Pour batter into a greased 9&#215;13 pan. Bake for about 20 minutes (or until an inserted toothpick comes out clean).

So good! Should I store in the fridge or on the counter?

I have made these about 5 times now and love them. This time I used this recipe as a base and used 5 cups of steel oats and only added an extra half of cup of milk. I used both applesauce and honey, replaced butter with coconut  oil, omitted the coca powder and replaced with mini chocolate chips and added dried cranberries and half a cup of peanut butter. I was going for more of an oatmeal base not brownie. Love this site!

Made this today with my 3.5 y.o. and we LOVE IT! My son is super picky but the fact that he ate a couple of bites without complaint and was smiling while chewing is a win in my book! Delicious and we don't feel weighed down or like it's sticking to our gut after eating some. Thank you so much!

Do you use cacao powder or cocoa powder? I have cacao on hand but I'm not sure if it would taste the same. TIA!

This blueberry oatmeal casserole recipe is a delicious brunch or breakfast! If blueberries aren&#39;t in season, use frozen berries, or swap in your favorite seasonal fruit.

Blueberry Oatmeal Casserole

flaxseed + 6 tablespoons warm water

whole rolled oats

almonds

hemp seeds

coconut flakes

brown sugar or coconut sugar

sea salt

almond milk (at room temp)

maple syrup

banana (chopped)

strawberries (sliced)

blueberries

Preheat the oven to 350°F and spray an 8x8-inch (or similar) baking dish with cooking spray.

In a small bowl, combine the flaxseed and warm water and set aside to thicken for about 5 minutes.

Reserve 2 tablespoons of the almonds, hemp seeds and coconut flakes and set aside. In a large bowl combine the oats, the remaining almonds, hemp seeds and coconut flakes, and the baking powder, cinnamon, brown sugar and salt.

In a medium bowl, combine the almond milk, maple syrup and coconut oil and whisk to combine. Stir in the flaxseed mixture and blend until smooth.

Pour the wet ingredients into the bowl of dry ingredients and stir to combine.

Layer the bananas and strawberries in the baking dish and spread the oat mixture on top. Sprinkle with the blueberries and the reserved almonds, hemp seeds and coconut flakes.

Bake for 40-50 minutes or until the top is crisp and the middle is set. I find it easiest to wedge a knife in and make sure the middle has thickened nicely. Remove and let cool for 15 minutes before serving.
