Simple and easy homemade Japanese rice porridge recipe. All you need is water and rice. Garnish with scallions, salted salmon, and nori, this homey, comforting dish will sure to keep you nourished and the chill at bay.&nbsp;

Japanese Rice Porridge (Okayu)

rice

250 ml water ((1 cup + 2 tsp))

green onion/scallion ((chopped))

umeboshi (Japanese pickled plum)

white sesame seeds

nori seaweed (kizami nori)

salted salmon

mitsuba (Japanese parsley) ((for garnish))

Gather all the ingredients. I follow the 1 to 5 rice-to-water ratio for my Okayu recipe.

Rinse the rice in water, then drain. Repeat until the water runs clear.

Soak the rice in the pot for at least 30 minutes.

After 30 minutes, drain the water completely.

Then add 250 ml of water into the pot.

Cover the pot and bring to a boil over high heat.

When boiling, lower the heat to the stove’s lowest setting (make sure to use the right size of stove burner for your pot size). Open the lid and gently mix with the spoon once, making sure rice is not stuck to the bottom of the pot.

Cover the lid and simmer the rice for 30 minutes (Tip: With a good size pot and the lowest heat on the stove, the water should not boil over. If you cook with more water or your pot is smaller than my pot, you may want to cover the lid at a slight angle so the water doesn’t boil over). During this time, I never open the lid or mix the rice. (Tip: If you are worried, you can take a quick peek and make sure there’s enough water so the rice doesn’t burn the bottom of the pot. If necessary, you can stir the pot or add “hot” water. Otherwise, don’t touch the rice because you would end up breaking the nice shape of rice kernels.)

After 30 minutes, turn off the heat and let it steam for 10 minutes. The rice should be soft and thickened. If you want to add something, like a beaten egg or salt, this is the time to add. I keep this recipe plain and simple. Serve into the individual rice bowls and garnish and put toppings of your choice.

Basic Congee Recipe - 粥

Rinse the rice to move excess starch, drain well and transfer to a bowl. Fill the bowl with water until the rice is submerged and soak for 20 minutes. Then drain the uncooked rice again.

In a large pot, add the broth and bring to a boil. Add the rice, ginger and salt and stir. Lower the heat to a simmer, cover and cook for 1 hour. Add more water if the consistency is too thick.

Love the simplicity and the authentic results! My go to Congee recipe. The only one I’ll use.

How to make simple and comforting Japanese rice porridge &quot;Okayu&quot; flavored with dashi and egg.

Easy Okayu with Egg (Japanese rice porridge)

eggs (medium size)

dashi stock

sake

mirin

tbsp light soy sauce

tbsp chopped green onion

drizzle sesame oil (optional)

tbsp kizami nori (optional)

Pour 400 ml dashi stock into a pot and bring to a boil over a medium heat.

While you wait for the dashi to boil, whisk 2 eggs in a small bowl until the yolk and whites are combined.

Optional: If you prefer your porridge with a thinner consistency, wash the cooked rice in a sieve and shake thoroughly to remove excess water.

Once the dashi is boiling, add 200 g cooked Japanese short-grain rice, 1 tsp sake, 1 tsp mirin and 1 tbsp light soy sauce.

Turn heat down to simmer and continue to heat with a lid set slightly ajar. Check the consistency frequently.

Once it reaches your desired consistency, pour the whisked egg into the pot and and cook for 20-30 seconds without mixing.

After 20-30 seconds, mix thoroughly to break up the egg and evenly distribute it through the rice.

Remove from the heat and divide into serving bowls.

Serve with 1 drizzle sesame oil and 1 tbsp chopped green onion or 2 tbsp kizami nori (or toppings of your choice).
