Old fashioned Apple Pandowdy is an apple cobbler-like dessert with molasses sweetened apples and a buttery rich topping.

Apple Pandowdy Recipe

apples

nutmeg

cinnamon

salt

molasses (130 grams)

all-purpose flour (215 grams)

baking powder (aluminum free)

sugar (100 grams)

salted butter (4 ounces, melted)

½ cup 2% milk (4 ounces)

Preheat the oven to 350ºF. Spray a 1 ½ quart baking dish or cast iron skillet with cooking spray. We used a 9&quot; pie plate.

Arrange the sliced apples in the baking dish.

Sprinkle the apples with nutmeg, cinnamon and salt over the apples. Drizzle evenly with molasses.

Cover the baking dish with foil and bake for 20 minutes.

While the apples are baking, combine the flour, baking powder and sugar in a medium bowl. Whisk well.

Add in the melted butter, milk and whisked egg. Mix just until combined. Do not over mix.

After the apples have baked for 20 minutes, spoon the batter over the apples, then bake for another 20-25 minutes or until the toothpick inserted in the topping comes out clean.

Serve with whipped cream or ice cream.

You can serve right from the dish, or you can turn it upside down onto a platter and serve with the apples on top.

Using a saucepan approx 6 - 7 inches...

Using a saucepan approx 6 - 7 inches in diameter, add all the lemon syrup ingredients and bring to a gentle boil, giving it a stir. Once it starts to boil, reduce the heat to a gentle simmer, and make the dumplings.

In a bowl, add the flour, baking powder...

In a bowl, add the flour, baking powder and butter. Using your fingers, rub the ingredients until fine breadcrumbs are formed. Then make a well in the middle and add the milk. Use a knife and cut the milk into dry ingredients, until a dough is formed. Divide in to 6 - 8 dumplings and form into balls, about the size of golf balls or a little smaller.

Gently place the dumplings into the lemon syrup...

Gently place the dumplings into the lemon syrup and allow to simmer for about 10 minutes. Spoon the syrup over the dumplings, and halfway through cooking, carefully turn the dumplings over using a spoon so they are all cooked evenly and nicely coated with the syrup. The dumplings will double in size and go fluffy, like the photo below.

Serve warm with a drizzle of the syrup...

Cherries in the Snow Dessert

cream cheese (room temperature)

sugar

2% milk

Cool Whip whipped topping (thawed)

9" pre-baked angel food cake

cherry pie filling (21 ounces each)

In a large bowl, use a hand mixer to whip the cream cheese and powdered sugar until creamy. Mix in 1/4 cup of milk until smooth, then add in the other 1/4 cup milk and mix again.  8 ounces cream cheese , ½ cup powdered sugar, ½ cup 2% milk

Gently fold in the Cool Whip. 12 ounces Cool Whip whipped topping

Break the cake into small pieces and add into the whipped mixture. Fold to combine. 1  9&quot; pre-baked angel food cake

Spoon the cake mixture into a 9×13 glass baking pan and spread it evenly.

Spread the cherry pie filling on top. Cover and refrigerate until serving. 2 cans cherry pie filling
