Copycat Olive Garden Zuppa Toscana

lb. Hot Italian sausage,

onion,

garlic,

kosher salt

black pepper

chicken broth

russet potatoes, diced

curly kale, leaves

heavy cream

bacon,

Parmesan,

In a large pot over medium heat, cook sausage, breaking up with the back of a wooden spoon, until browned and no longer pink, 5 to 7 minutes. Transfer to a plate to drain.

Add onion to pot and let cook until soft, 5 minutes, then add garlic and cook until fragrant, 1 minute more. Season with salt and pepper. Add chicken broth and potatoes and cook until potatoes are tender, 23 to 25 minutes.

Stir in kale and let cook until leaves are tender and bright green, 3 minutes, then stir in heavy cream, sausage, and bacon and simmer 5 minutes more.

Season with pepper, garnish with Parm, and serve.

I did 8 cups of broth, 3 big russet potatoes, spicy Italian sausage, 1 full bug yellow onion, 3 cloves of garlic minced, swapped the bacon for pancetta, an Italian blend of dried rosemary, thyme, and oregano, salt, fresh ground black pepper, red pepper flake, and garlic sauce. Trader Joe’s only had heavy whipping cream, I did about 3/4 cup of that and a big handful of chopped kale.

For something REALLY spectacular, add a pound each of cleaned clams, and mussels to the last phase of cooking. About 5-7 minutes usually. Delicious!

Sad to see so many negative comments on peoples tweaks to this recipe.  People change recipes all the time based on what they have on hand, personal preferences or dietary restrictions. I personally love seeing them, lots of great ideas! If you don't like it please keep scrolling, CHOOSE KINDNESS!

I make this for only myself.  I didn't like the kale consistency after reheating,  especially after a couple of times,  and also wanted to freeze some.  So now I do not add either kale or cream to the pot to cook.  Instead, I use baby kale torn in small pieces directly into my serving bowl, and pour the hot soup over it to soften a bit.  Then I stir a spoonful of cream into the bowl.  I'd like to report on freezing results,  but I like it so well, there's been none left to freeze!  🤗

It was perfect! Absolutely DELISH!  Good to know that half & half works; I used 8 cups of broth and it was soooo creamy.   Next time I’ll freeze some and add cream just before reheating & serving.  BTW, I only had sweet Italian sausage so I added red pepper flakes to sausage and it was just right.

Love this recipe! I didn't have any russets,  so I used baby reds. Added 1/2lb of mild sausage to the 1 lb. Spicy sausage to make it a little meatier. And used 8 cups of broth.  Hubby said it was better than the OG's version!  Thank you!

Awesome! Tastes just like Olive Garden's soup. I used 8 cups of chicken bone broth. Bone broth is good  because it's great for natural collagen. I also used only 3 large russet potatoes, mild Italian sausage, heavy whipping cream and turkey bacon. I didn't  add parmesan cheese. The prepare time should be changed to 45 - 1 hr. It took a long time to dice the pototes  by hand.

This is great. I used baby spinach leaves in place of kale, sliced and diced kielbasa sausage for extra meat and I always use applewood bacon it has the best flavor

Fantastic recipe!  It’s quick, easy, relatively inexpensive but most of all delicious!  
I used Half and Half to keep lighter and I did not have bacon on hand, so I used a teeny bit of smoked paprika to give it the subtle smokiness the bacon may have contributed.   Thanks for the great recipe and inspiration to make a delicious soup!

This turned out Amazing!! First time making it and I made a double batch because we love the restaurant version so much. Tastes exactly identical. The bacon adds the smokey layer. We will definately be making this a couple times a month.

I plan to use sweet Italian sausage, half & half and no bacon.  Also like the idea of beans and maybe rosemary and thyme.  This may make bus6979 happy plan to use full size kale.  Which I will cut into smaller pieces.   I have made this once before with hot sausage, bacon and added pepper flakes.  The sausage I used wasn't very good and spoiled a good recipe, normal brand wasn't available.

I try to make a healthier version. I cut the sausage amount in half and use almond milk instead of heavy cream. I’ve made it both ways, and it is obviously more creamy with the half and half but still so good doing the healthy way. I also have to use sweet sausage because I cannot handle the heat. I add some red pepper flakes as well.

I’m this for dinner with family and friends.  They absolutely loved it!
