For the dreamiest roasted potatoes — with creamy insides and very crispy outsides — follow this classic Greek method of roasting peeled potatoes in equal parts olive oil, lemon juice and chicken stock. The potatoes soak up the flavorful liquid, allowing the insides to remain tender while the outsides crisp in the oven’s high heat. You can follow the same method for russet potatoes, though the final result will be less moist.

Greek Lemon Potatoes

Flaky salt and black pepper,

Heat the oven to 450 degrees. On a rimmed sheet pan, combine the chicken broth, olive oil, lemon juice and kosher salt. Toss the potatoes in the liquid to coat, then arrange the potatoes in an even layer, cut-sides down. Sprinkle the oregano over the potatoes, if using.

Roast the potatoes, flipping halfway through, until fork-tender, dark brown and crispy on top, 55 to 60 minutes. (If the potatoes are cooked through but not as crispy as you’d like, run them under the broiler for a few minutes.) Sprinkle with flaky salt and black pepper as desired.

Originally the Mexican Martini was just a large margarita in Austin, Tex. But the presentation calls for the margarita to be served in a martini glass, with olives on a spear. Because it is about twice as large as a regular drink, customers are usually given the cocktail shaker and invited to pour it themselves.

Wet half the lip of a martini glass and dip it in salt. Chill the glass. Pour the liquid ingredients into a cocktail shaker and fill with ice. Shake vigorously for 10 seconds. Strain into the glass. Garnish with olives on a spear.

We used Frescatrano olives and their brine for this.  We liked the more mellow olive taste.

Me and the old lady crushed these in West Texas. Absolutely love this recipe. I also used jalapeño olives and brine. The spice was perfect to off balance the sweetness.

Highly recommend substituting pineapple juice for the orange juice if you have it.

Lived in central Texas 6 years. This is the recipe. I also agree pickled jalapeños and tajin on the rim make the drink.

So delicious! Served to friends and everyone loved them. If you’re not an olive fan, you can’t taste any real olive flavor in the drink, just a nice balanced flavor.

Used jalapeno stuffed olives which were nice. We didn't have Cointreau so subbed blood orange liquor (solerno) and blood orange juice. Don't skimp on the brine from the olive jar. The mix was really good. Turned out great!

I am a northerner who has resided in Austin for 25 years.  I make this drink for Christmas holiday gatherings with my family in New England.   I always add a few drops of Chalula Hot Sauce to this recipe and serve with jalapeño stuffed olives.  My family affectionately calls this drink The Hot and Dirty.

Instead of salting the rim try tajin! And add a hint of jalapeño juice for kick
