This is a popular Japanese dish of an omelette filled with rice and topped with a red wine sauce or tomato ketchup. 


Omu-rice 

300 grams/10½oz Japanese short-grain rice

vegetable oil

grams/5½oz chicken thighs, boneless and skin removed, chopped into small cubes

bay leaf

tomato ketchup, sauce

milliliters/¾fl oz soy sauce

unsalted butter

salt

white pepper

grams/3½oz onion, minced

plain flour

brown onion, cut in half and sliced against the grain

Chicken shawarma is usually cooked on a spit, but this is roasted in the oven. Here, I’ve served it modestly, on a pile of shredded iceberg, with some warmed pitta, lemon wedges and a tahini sauce. When I make this for groups of friends, or for a family lunch or supper, I slice up some fresh tomatoes sprinkled with mint, and cut some cucumbers into wedged slices, and macerate some red onions, cut into half-moons, with red wine vinegar or lime – in which case it will serve up to 10 people.

Nadiya’s take on the Louisiana po’ boy uses fried chicken instead of the more traditional shrimp. Topped with fresh cucumber and spicy coconut sambal, they’re a taste sensation.

These spicy Jamaican patties are a traditional staple in the Caribbean. They make a great picnic or barbecue addition.

Jamaican beef patties

300 grams/10½oz plain flour, plus extra for dusting

1½ tbsp Madras curry powder

1½ tbsp ground turmeric

free-range egg, beaten

Traditionally made in a tandoor, these tandoori chicken skewers taste great cooked on a barbecue or grill. 

For this recipe, you will need skewers (see tip), a clean muslin and a blender or small food processor.

Ghribas are Moroccan cookies that come in various flavours, but this chocolate and almond version is one of our favourites. They have a cracked top and chewy centre, and are deliciously rich and fragrant.

A spiced yoghurt marinade makes this chicken gyro tender and full of flavour. The name gyro comes from the Greek word for ‘turn’: meat is cooked on a vertical spit which turns in front of a heat source. For this version, you don’t need a spit: cook the chicken on a couple of large skewers, and if the weather isn’t looking bright enough for a barbie you can cook it in the oven.
