Think of this as a lighter and quick version of French onion chicken! This easy skillet chicken recipe with loads of caramelized onion will blow your mind! Make every use of the delicious onion juice by serving this chicken over plain rice or your grain of choice. It&#039;s also delicious with pita or your favorite bread to wipe the juice!

Skillet Onion Chicken Recipe

Extra virgin olive oil

onions

chicken thighs (bone-in, skin removed)

chicken broth

Salt (to taste)

Cook the onions. Heat about 2 to 3 tablespoons extra virgin olive oil in a large cast iron skillet or pan over medium-high heat. Add the sliced onions and season well with kosher salt.  Sauté the onions, stirring often until they collapse and release their juices turning a beautiful deep golden brown in color, about 10 to 15 minutes (cover the pan to speed up the cooking time, if you like).  Manage the heat to make sure the onions soften and caramelize without burning.

In the meantime, season the chicken on both sides with kosher salt.

Once the onions are nicely caramelized, push them to the edges of the pan. Add the chicken (meaty side down first) to the pan and sear on both sides until golden brown. Do not cover the pan this time. (If the onions are in the way, you can move them around and add them on top of the chicken so that there is enough room in the pan for the chicken to brown well).

Once the chicken is nicely browned, add in the broth or water (you should have some juices in the pan from the chicken and the onions. Start with 1/4 cup of liquid and add more if needed to form a sauce).

Cover the pan and cook for about 25 to 30 minutes or until the chicken is fully cooked through and a meat thermometer inserted in the center of the chicken reads 165 degrees F.  Serve over rice or with pita bread (the bread with the onion sauce is delish!)

This one-skillet chicken dish delivers all the flavors and cozy comforts of traditional French onion soup.

French Onion Chicken

extra virgin olive oil, (plus more as needed)

chicken breasts ((3 to 4))

kosher salt, (divided, plus more to taste)

black pepper, (divided, plus more to taste)

yellow onions, (thinly sliced)

brown sugar

beef broth

Worcestershire sauce

chopped fresh thyme, (plus more to garnish)

Gruyère cheese ((about 1 cup))

Baguette, (for serving (optional))

Season the chicken. Pat the chicken breasts dry with a paper towel. Season on both sides with 1 teaspoon salt and 1/2 teaspoon ground black pepper.

Brown the chicken. Heat olive oil in a large, oven-safe skillet set over medium-high heat. Add the chicken breasts and cook undisturbed until they are evenly browned, about 5 minutes. Flip and cook on the other side the same way. Transfer the chicken breasts to a plate and set aside. They do not need to be cooked through at this point.

Sauté the onions. If the skillet is looking dry, add another drizzle of olive oil. Add the sliced onions, light brown sugar, and 1/2 teaspoon salt. Sauté for 10 minutes, stirring often, until the onions begin to soften. Reduce the heat to medium-low, cover, and cook for 5 minutes. Remove the lid and stir.

Simmer the onions. Stir in the beef broth, Worcestershire sauce, and chopped thyme. Cook, uncovered, until the most of the broth has reduced, 8 to 10 minutes. Season to taste with more salt and pepper, if needed.

Add the chicken. Nestle the chicken breasts into the skillet, overlapping them slightly as needed to help them fit. Spoon some of the onions over top of the chicken and simmer until chicken is cooked through (registers 165°F on an instant read thermometer). Meanwhile, preheat the broiler to low.

Broil and serve. Sprinkle the grated Gruyere cheese evenly over the top of the chicken. Place the skillet in the oven and broil until the cheese is melted and golden brown. Garnish with fresh thyme and serve with baguette.
