Orange Creamsicle Cookies

Orange food coloring (or 1 part red to 2 parts yellow) optional

Preheat oven to 350F. Line cookie sheets with parchment paper. Set aside.

In a large mixing bowl, beat together butter, orange extract, vanilla extract, cream cheese, and egg with an electric mixer until smooth. Slowly add the cake mix and mix well.

Optional: add orange food coloring if until the cookie dough reaches your desired orange color.

Fold white chocolate chips into the dough. Chill in the refrigerator for 30 minutes.

Form the dough into 24 balls. Roll each in the powdered sugar and then place on prepared cookie sheets.

Bake for 12-13 minutes. Cool on the cookie sheet for 2-3 minutes, then remove from the pan and finish cooling on a wire cooling rack.

Place 1 tbsp cream cheese in a medium bowl and microwave for 5-10 seconds. If the cream cheese was in the fridge, these 5-10 seconds in the microwave will help soften it up to mix well with the other ingredients.

Combine cream cheese with 1 tsp orange extract, 1/2 tsp vanilla extract, and 1/3 cup granulated sugar. Whisk until the ingredients are mixed together.

Slowly whisk in 1 cup whole milk and 3/4 cup heavy cream.

Whisk in a few drops of yellow food coloring and a few drops of red food coloring until the mixture is the desired color.

Pour the mixture into a Ninja Creami pint container, ensuring it does not go over the max fill line.

Freeze the pint for 24 hours, making sure it is placed on a flat surface in the freezer.

After 24 hours, remove the pint from the freezer, and plug in your Ninja Creami machine! Time for the magic.
Remove the lid from the pint and grab the Ninja Creami outer bowl. Place the pint securely into the outer bowl and cover with the lid. Once the lid is on, place the outer bowl into the machine, twisting to the right until it locks into place. Press the "Ice Cream" button and (try to) wait patiently for the creamy treat coming your way.

Once the process is finished, press and hold the button on the left side of the Creami to twist the bowl to the left and remove it from the machine. Twist the lid off of the outer bowl and remove the pint.

Now your orange creamsicle ice cream is ready to enjoy!

This orange creamsicle cake tastes just like the frozen ice cream bars I used to enjoy when I was a kid. The secret is using real orange juice concentrate, orange zest and a super creamy frosting. This orange creamsicle cake recipe will be a huge hit, having you humming the ice cream truck song all day long. 

Orange Creamsicle Cake

citric acid (optional)

unsalted butter (softened)

orange juice concentrate (defrosted at room temperature)

milk (warmed)

eggs (room temperature)

vegetable oil

yellow food coloring

mascarpone cheese (softened)

heavy whipping cream

Preheat your oven to 335℉ and make sure all your ingredients are at room temperature (milk, eggs, orange juice, butter). 

Prepare a standard rectangle 9-inch x 13-inch sheet cake pan with cake goop on the sides and parchment paper on the bottom. This recipe will also work in two 8&quot; round cake pans.

In the bowl of your stand mixer, combine together the cake flour, sugar, salt, baking powder, and baking soda. Whisk and set aside.

Measure the milk, orange juice concentrate, oil, eggs, extracts, and zest in a small bowl and whisk to combine. 

Add the room-temperature butter to the dry ingredients in the stand mixer with the paddle attachment. Mix on low speed until the mixture resembles coarse sand.

Add in ⅓ of the wet ingredients mixture, turn it up to medium speed, and mix for one full minute. The batter will look lighter in color and fluffier. Make sure to scrape the bowl.

Add in the drops of food color and citric acid and mix until combined.

Slowly pour in the remaining liquid and mix on low speed until just combined. 

Pour the cake batter into the prepared pan and bake it for 35-40 minutes until a toothpick comes out clean. 

Cool the cake for 10 minutes in the pan, and then flip it out onto a cooling rack. You can also leave it in the pan and serve it from there.

Once the cake has cooled completely, place it on a serving tray.

Making Orange Cake

In a medium bowl or the bowl of a stand mixer add the mascarpone cheese and cream cheese and mix with the whisk attachment or an electric mixer. 

Once the chunks have smoothed out, add the vanilla and powdered sugar and blend until combined. 

In a separate bowl, whip the cold heavy cream to medium-stiff peaks. 

Fold about 2 cups of whipped cream into the mascarpone mixture. Repeat with the remaining cream until it&#39;s all incorporated.

Making Mascarpone Frosting

Frost the top (and sides, optional) of the cool cake with a plentiful amount of fluffy mascarpone frosting. 

Slice fresh oranges into wedges and place them on top of the cake in a geometric pattern. 

Pipe some shells of frosting in a pattern on top of the cake.

Store this cake wrapped in plastic wrap or in an airtight container in the refrigerator. Because of the mascarpone cheese frosting, the frosted cake needs to be refrigerated if you are not serving it within 2 hours. The whipped topping can melt at warmer temperatures, so take note if it is exposed to sunlight.
