Orange Creamsicle Cookies are butter cookies made with orange zest and added food coloring to remind you of an orange creamsicle treat.

Orange Creamsicle Cookies

(1 stick or 113 grams) salted butter, (softened)

(8 ounces) cream cheese, (softened)

orange

(300 grams) granulated sugar

egg, (room temperature)

vanilla extract

orange extract, ((you can start with

drop red food coloring ((add more depending on dark you want the orange to be))

yellow food coloring ((add more depending on dark you want the orange to be))

(282 grams) all-purpose flour

baking powder

(126 grams) confectioners' sugar, (divided)

Preheat oven.

In large bowl, beat butter, cream cheese, orange zest, and sugar.

In a large bowl using a hand-held mixer, beat butter, cream cheese, orange zest, and granulated sugar until blended. 

Add in egg, vanilla, orange extract, and food coloring.

Add in egg, vanilla, orange extract, and the red and yellow food coloring.

Add in flour, baking powder, and half cup confectioners&#39; sugar.

Add in flour, baking powder, and ½ cup confectioners&#039; sugar. With the mixer on low, gradually beat into a creamed mixture.

Create balls and roll into confectioners&#39; sugar.

Using a 2-tablespoon cookie scoop, create balls and roll them in the remaining confectioners&#039; sugar.

Place on parchment-lined baking sheet. Flatten.

Place on a parchment-lined baking sheet. Using your hands or the bottom of a drinking glass flatten balls into rounds. Place approximately 6 dough balls on each sheet.

Bake.

Bake until they no longer appear wet on top, 8-11 minutes. After about 5 minutes cooling on the pan (they will be soft), place on cooling racks to cool completely.

Giant Orange flavored sugar cookie stuffed with vanilla buttercream then topped with a white chocolate drizzle. These chewy cookies are served chilled making them just as refreshing as your favorite popsicle.

Start by making the buttercream frosting. Whip the butter until smooth. 

Add the powdered sugar, one cup at a time, mixing until it is fully incorporated. You may need to add a few tsp of milk to help the powdered sugar come together with the butter. 

Once all of the powdered sugar has been added to the butter, add the vanilla extract. Mix until well combined. 

Spread the frosting into a thin layer on a parchment paper or silicone mat lined baking sheet and place in the freezer for 30 minutes. 

While the frosting is in the freezer, make the cookie dough. 

Preheat the oven to 350°. Cream together the butter and granulated sugar in the bowl of a stand mixer or in a large bowl with an electric hand mixer. Cream for 2 minutes. 

Scrape the sides of the bowl and add in the eggs and orange baking emulsion. Mix until well combined. 

Add in the flour and baking powder. Mix until the dough comes together. 

Add the Food coloring a few drops at a time until the dough has reached your desired color. 

Portion out the dough into 1/3 cup portions. Roll the portions into a ball and then press your thumb into the dough to create a deep pocket and arrange on a parchment paper or silicone mat lined baking sheet. Repeat with remaining dough. 

When all of the dough has been prepped, take the frosting out of the freezer and chop the frosting into small pieces.

Fill each cookie dough ball with pieces of frozen frosting. 

Close up the cookie dough around the frosting and flatten the cookie dough slightly with your hands so it looks like a hockey puck. Repeat with remaining dough. 

Bake at 350° for 13- 15 minutes. The cookie will flatten  and spread slightly, puff up and the center of the cookie will no longer look wet and glossy when they are ready to come out of the oven. 

Allow the cookies to cool completely on the pan. 

Once the cookies have cooled completely, drizzle the top of the cookie with melted white chocolate. 

Chill in the fridge for 30 minutes prior to serving. 

These soft and chewy Creamsicle Orange Cookies are so easy to make and have a lovely orange and vanilla flavor - just like your favorite popsicle! These Creamsicle Cookies are the perfect cookie for holidays, parties or just a sweet afternoon treat!

Preheat the oven to 350°F. Line two large baking sheets with parchment paper or a silicone baking mat. Set aside.

In a large mixing bowl or the bowl of a stand mixer, whisk together the white cake mix, orange gelatin powder and orange zest until fully combined.

Add the butter and eggs to the bowl. Use a hand mixer or stand mixer to beat the ingredients together just until combined, about 2 minutes, scraping down the sides and bottom of the bowl as needed.

Add the white chocolate chips and fold into the cookie dough.

Use a 1 ½ tablespoon cookie scoop to scoop out the dough, roll the dough into a ball and place on the prepared cookie sheet. Repeat with the remaining dough making sure to leave about 2 inches between each ball.

Bake the cookies for 10 to 13 minutes or until the edges are set. Remove the cookies from the oven and let cool for about 10 minutes on the baking sheet before removing to a cooling rack to finish cooling.

These cookies are so soft, buttery, tender, and just melt in your mouth! The dough is lightly perfumed with orange zest and there’s loads of white chocolate in every bite. They remind me of an Orange Creamsicle, but in cookie form!

Place mounds on a large plate, flatten mounds slightly, cover with plastic wrap, and refrigerate for at least 3 hours, or up to 5 days, before baking. Do not bake with warm dough because cookies will spread and bake thinner and flatter.
