Always elegant, chocolate mousse is not at all difficult to make, and it can be prepared up to two days in advance. A classic chocolate mousse gets its foamy consistency from stiffly beaten egg whites. Though many recipes call for also folding in whipped cream, this one does not, the better to savor the intense chocolate experience. It has a hint of orange liqueur, a splash of espresso and a garnish of crystallized ginger.

Dark Chocolate Mousse With Candied Ginger

unsalted butter (1 stick)

espresso

granulated sugar

eggs,

sugar

vanilla extract (optional)

Set a medium bowl over a saucepan of boiling water. (Don’t let water touch the bottom of the bowl.) Reduce heat to a simmer. Add the chocolate, butter, orange liqueur and espresso. When chocolate is completely melted, about 10 minutes, remove from heat.

Add sugar and beat with a wire whisk until the sugar is dissolved and the mixture is slightly thickened and glossy, 1 to 2 minutes. Let the mixture cool slightly, then quickly whisk in the egg yolks to incorporate.

In a clean, dry medium bowl, beat egg whites to stiff peaks. With a rubber spatula, stir 1/3 of the beaten egg whites into chocolate mixture to lighten it.

Gently fold in the remaining whites to incorporate, taking care not to deflate. (It’s OK if mixture looks a little streaky.)

Pour mixture into 4-ounce ramekins or other vessels, like teacups or wine glasses. For a large version, pour into an attractive bowl. Cover with plastic wrap and refrigerate for at least 2 hours or up to 2 days in advance.

To serve, whip the cream to soft peaks. (Add a tablespoon of sugar and a drop of vanilla extract, if you wish.) Top each serving with a dollop of whipped cream and some crystallized ginger.

Named for the Pegu Club in Malaysia where it originated, apparently this was a big hit between the world wars at the Savoy Club in London. This is a gin drink for non-gin lovers.

Add all ingredients to a cocktail shaker with ice.

Shake

Shake well for 10-15 seconds or until the outside of the shaker becomes frosted.

Strain

Strain into a chilled cocktail glass, and serve.

Florida A&M, or FAMU, the historically Black college and university founded in 1887 in Tallahassee, canceled its homecoming celebrations for 2020 because of the Covid-19 pandemic. This whiskey cooler from Shameeka Ayers, an alumna, is Florida sunshine beamed into a glass. The orange and green are inspired by FAMU's colors; Ms. Ayers calls the drink the Three Strike,  inspired by the school's “Strike, Strike and Strike Again” chant. The black tea adds depth and is refreshing year-round. The Uncle Nearest whiskey honors Nathan "Nearest" Green, the enslaved African who taught Jack Daniels how to distill.

Black Tea and Whiskey Cooler

Prepare the tea: Place a kettle over high and bring 2 1/2 cups water to a boil. Remove from heat and transfer 2 cups water to a heatproof vessel.

Add the tea and let steep for 10 minutes. Let the hot tea cool to room temperature. (This yields 2 cups of tea, so you will have some left over; save it for unsweetened iced tea or additional cocktails.)

Use a muddler to slightly pound the mint leaves in a cocktail shaker. You’ll smell the fragrance as the oils release.

Fill the shaker halfway with ice, then add the whiskey, peach nectar, orange liqueur, vanilla extract and 6 ounces of the prepared tea. Shake for 30 seconds. Strain each serving into a highball glass halfway filled with ice and garnish with a mint sprig.

A modern and decidedly French-slanted nightcap, the Nuitcap combines Cognac, blanc vermouth and a drinker’s choice of bitter, herbal liqueur: Salers, génépy or Suze. Salers makes for a drier cocktail, while génépy leans sweeter and more herbal. Suze shifts the drink toward the more bitter — and bright yellow — side. A final splash of soda water is kept to a modest 1 ounce, diluting the drink, but not so much that it moves into spritz territory.

Fill a mixing glass with ice, and add the Cognac, vermouth, Salers and orange liqueur. Stir for 30 seconds, then strain into an ice-filled lowball glass. Top with soda water and garnish with the orange wedge or lemon peel.

While a classic gin fizz uses lemon juice, the sweet acidity of lime in this variation skews it toward a (very) frothy gimlet. To ensure plenty of that froth, use a double shake to make the cocktail: first without ice to foam the egg white, then a second time with ice to chill and dilute the drink. Serve traditionally without ice in a small Collins or fizz glass, or go rogue and serve over a few cubes. Either way, as with all egg white drinks, drink with efficiency to capitalize on the drink’s froth and avoid its inevitable separation.

In a shaker, combine the gin, lime juice, simple syrup, orange liqueur and egg white. Cover and shake vigorously for 10 seconds. Add ice to the shaker, cover again and shake vigorously until chilled and well frothed, about 10 to 15 seconds more. Double-strain into a small Collins or fizz glass without ice and top with soda water. Serve immediately.

The mimosa is one of the popular classics – be it at brunch, on festive occasions, as a welcome drink, or even on the plane.

Pour the orange juice and liqueur into a champagne glass.

Fill the glass with champagne.

Decorate the drink with a quarter of an orange slice and enjoy.

(12-ounce) package frozen raspberries, thawed,

In a medium saucepan over medium heat, whisk together raspberry and strawberry juices with 2/3 cup sugar and cornstarch. Boil until thickened, 1 to 2 minutes. Transfer to a medium bowl and refrigerate until cool, about 20 minutes.

Meanwhile, in a medium bowl, whip heavy cream to stiff peaks; set aside. In a large bowl, combine yogurt and remaining 2/3 cup sugar. Fold in whipped cream.

Break ladyfingers in half. Place half of them in a 2-quart glass bowl or trifle dish. Drizzle cookies with 1 tablespoon liqueur, if using, and dollop with one-third of yogurt mixture. Spoon half of berries over yogurt mixture, then drizzle 3 to 4 tablespoons thickened juices. Layer another one-third of yogurt mixture over berries, followed by a layer of remaining ladyfingers. Drizzle with remaining 1 tablespoon liqueur and dollop with remaining yogurt mixture. Top with remaining berries and 3 to 4 more tablespoons thickened juice. Refrigerate until chilled, about 2 hours, before serving.

This cocktail gives a Christmassy twist to a traditional summer sangria, flavouring it with cranberry and orange.
