Tall and fluffy Orange Muffins bursting with citrus flavor from fresh orange juice and zest. Made with whole grain flour and yogurt for super delicious and healthier spin on morning muffins! Recipe yields 10 muffins.

Fluffy Orange Muffins

whole wheat pastry flour (can sub all-purpose)

organic cane sugar

tbsp baking powder

tsp fine sea salt

oranges

plain yogurt*

orange juice

avocado oil, melted coconut oil, or olive oil

eggs, ideally

tsp vanilla extract

Preheat the oven to 425°F and grease a muffin tin.

 Stir together flour, sugar, baking powder, and salt in a large mixing bowl.

In a medium bowl or liquid measuring cup, whisk together yogurt, oil, orange juice, vanilla, and eggs. Stir in zest.

Pour the wet ingredients into the dry ingredients, stirring with a wooden spoon just until combined. Lumps are ok!

Spoon batter evenly into 10 muffin cups. Sprinkle each muffin with 1/4 tsp of sugar for a crunchy exterior, if desired. Bake for 8 minutes at 425°F and then reduce the heat to 350°F (keeping muffins in oven) and bake for another 10 minutes, or until a fork comes out clean. Cool muffins in tin for 10 minutes before transferring to a wire rack to cool. You may need to run a knife along the edge of the muffin tin to help loosen them out. These are fab topped with my Cream Cheese Frosting!

These are delicious! New fav muffin recipe. I love citrusy baked goods.

Yummy!!!! I made a vegan version using JustEgg instead of the egg (but tofu or flax egg would easily work, too!) and happen to have vegan sour cream in place of the yogurt but any vegan yogurt would likely do as well. while I had the orange juice I did not have any oranges so I substituted six drops of doTERRA wild orange essential oil for the zest. I made it into a loaf baking it at 400°F for 50minutes.  It smells and tastes divine (and my non-vegan hubby agrees!)

I just so happened to have all the ingredients in the house and they turned out wonderfully!
They are INCREDIBLY fluffy and I like that they are not too sweet, adding the sugar on top before baking was a lovely touch. 
An added bonus was they made the house smell AMAZING. 
I was able to fill 12 muffin cups - the more the merrier!

These are absolutely amazing! I baked them after work today, &amp; they smelled divine. I topped mine this evening with your healthy cream cheese frosting, &amp; it tasted like a wedding cake to me. Delicate, bright, &amp; flavorful. I made them with Bob’s Red Mill 1-for-1 GF flour, &amp; they turned out perfectly.

I couldn’t get this recipe out of my head when I saw it over the weekend and the first chance I got I headed to the store to pick up some oranges!! 😂😂
 This recipe was everything I expected and more! So simple, not overly sweet and perfect have to have coffee in the morning. Delicious!

Really good. I added dried cranberries and chopped walnuts.  Would be good with almond slivers too.  Oh and I used white whole wheat flour because I didn't have whole wheat pastry flour. Still turned out great! I might try replacing the vanilla extract with almond extract next time??

Also, I have blended half an orange with some water for the juice and added a little cinnamon struesel for the topping. Orange muffins made with orange juice, orange zest, whole wheat flour and without eggs. These muffins have a moist and light crumb.

Orange Muffins Recipe (With Chocolate Glaze)

whole wheat flour (- 120 grams)

sugar

Orange Juice

orange zest

salt

baking soda

baking powder

corn starch

cocoa powder

sugar (or add as required)

water (or add as required)

First seive whole wheat flour, corn starch, baking soda, baking powder and a pinch of salt in a mixing bowl or pan.

Keep the sieved dry mixture aside.

For the orange zest, with a zester or grater, grate the zest from one medium orange and set aside.

Line a muffin tray or pan with muffin liners. Also preheat the oven at 180 degrees Celsius/356 degrees Fahrenheit for about 10 to 12 minutes.

In another bowl, take sugar and oil. Simply mix and set aside.

Prepare the orange juice in an electric juicer or a blender. If using a blender, then remove the seeds from the orange segments and then blend. Then strain the orange juice through a fine seive. From 3 oranges, I got 1 cup orange juice.

Add 1 cup orange juice to the sugar + oil mixture.

Stir briskly and very well till the sugar dissolves and the mixture looks even.

Add this orange juice mixture to the sieved dry flour mixture. Also add the orange zest.

With a wired whisk, stir the mixture to a smooth batter with light pressure from hands. Don&#039;t over mix.

Making orange muffins batter

Spoon the batter in the muffin liners till it reaches ¾ part of the liners. Gently shake the pan to release any extra air bubbles.

Place the muffin tray in the preheated oven. Bake orange muffins at 180 degrees Celsius/356 degrees Fahrenheit for 20 to 25 minutes or till a bamboo skewer inserted in the muffins comes out clean.

Baking time varies with the type and size of oven, so keep this in mind.

Place the muffin tray on a wired rack for about 10 minutes. Later remove the muffins from the pan.

You can serve orange muffins plain or dusted with icing sugar, cocoa powder or prepare any chocolate glaze or icing. The recipe yields 8 regular sized muffins.

Baking orange muffins

Take cocoa powder in a small pan or sauce pan.

Add orange juice, sugar, oil and water.

Mix everything and keep the pan on a low heat on the stovetop.

Stir till the mixture thickens a bit. The sugar should also dissolve completely.

When the glaze is still warm, spread it on the muffins. You can also slice the orange muffins and then spread the glaze on the base slice. Cover with the top slice and then spread the glaze on the top. Allow the glaze to cool before serving.

Serve eggless orange muffins as a sweet snack or as a dessert.

Making chocolate glaze

Orange Streusel Muffins, a yummy flavorful breakfast, snack or anytime muffin, a perfect combination of orange and chocolate, a must try!

Streusel Orange Muffins

all purpose flour

orange

milk (I use 2%)

orange juice (I used fresh juice)

vegetable oil (I use sunflower or corn oil)

butter (softened)

flour

chocolate

Pre-heat oven to 350° (180° C). Grease muffin tins.

In a small bowl combine sugar, butter and flour until crumbly then stir in chips and set aside.

STREUSEL TOPPING

In a medium bowl whisk together flour, sugar, baking powder and salt. Stir in orange rind. Make a well in the center and add egg, milk, orange juice and oil. Stir just until moistened (10-12 stirs). Transfer into the prepared muffin tins and sprinkle with the topping. Bake for approximately 15-20 minutes. Enjoy!

I tried as a cake in a springform pan (smallest I had was seven and a quarter interior dimension).  The streusel melted in the oven and was sort of a gooey butter mass in the center of the cake.  I did check for doneness, and when removed from springform it looked terrific.  My office mates are my guinea pigs, so we will see.

Thank you for such an excellent recipe that is delicious as it is simple! I substituted pastry flour for cake flour and added a bit more orange juice than the recipe called for. Split the batter into twelve decent-sized muffins, and each one came out incredibly moist and not too sweet. MANY THANKS FROM SUNNY SINGAPORE!
