You are in for a wonderful treat with this absolutely delicious cookies and cream cheesecake bar recipe. This is a must make recipe with all of the tasty Oreos and cream cheese!

Cookies and Cream Cheesecake Bars Recipe

Oreo cookies

unsalted butter

(8 ounce) cream cheese (softened)

sugar

sour cream

vanilla

salt

eggs (room temp)

Preheat oven to 325°F. Line a 9 x 13-inch pan with foil, leaving a 2-inch overhang on two sides (I spray mine with cooking spray).2. Make the crust: Place 28 Oreos in a food processor and process until finely ground. Pour into a large bowl, add the melted butter, and stir with a flexible spatula until all crumbs are moistened. Place the cookie-crumb mixture in the lined pan and, using your fingers, press the mixture firmly and evenly into the bottom. Bake 10 minutes, then remove to a wire cooling rack (leave the oven on) while you make the filling. Snap the remaining Oreos in half, put them in the food processor, and turn on and off quickly a few times, just until the cookies are roughly chopped.

Make the filling: In a large bowl, using an electric mixer on medium speed, beat the cream cheese and sugar until well blended, about 2 minutes. Scrape down the sides and bottom of the bowl with a flexible spatula and beat again until uniform. Beat in sour cream, vanilla and salt. Scrape down the bowl and mix again. Add the eggs, one at a time, beating well after each. After beating in the last egg, scrape down the sides and bottom of the bowl and beat one more time, to make sure the mixture is fully combined. Stir in chopped Oreos with the same spatula.

Pour the cream cheese mixture over the baked cookie crust, smooth the top with the spatula, and bake for 40 minutes, until the filling is set around the edges but still slightly wobbly in the center when you gently shake the pan. Remove the pan to a wire rack to cool to room temperature, about 1 hour. When cool, cover it with foil and refrigerate until well chilled, at least 3 hours. (I chill mine overnight)

To cut, use the foil overhang to lift the cheesecake out of the pan and place on a large cutting board. Use a sharp chef&#039;s knife to cut the cheesecake into bars, rinsing off the knife with hot water and wiping it dry between each cut. Keep refrigerated until ready to serve.

These are the best! My family scarfs them down. I have not made them for a while. We love to have them when we are watching our favorite weekly night time soap opera. When that show ended for the season, I stopped making them. I am glad I came across this recipe again!

I made these exactly as the recipe is written but tripled for an office potluck (and some for the husband and kids at home). They were delicious and THE most popular item. Everyone had seconds and wanted to bring home some for their spouses. Decadent, sinful and so easy to make! Thanks so much!

These are fantastic! Due to the previous comments about it not cooking through I made some adjustments that worked perfectly. Add the cookie dough to the bottom, bake 10 min at 325. Then add the Oreos, bake another 10 min. Finally add the cheesecake mixture and bake for the described time of 30 min. It came out perfectly cooked through!! Everyone raved about it, I will definitely make it again!

People! Stop using a site that CLEARLY doesn’t test the recipes they post! Doesn’t fit the pan, serious issues with cooking time, etc. Instead of pontificating on whether a dessert recipe is insulted by its politically incorrect name (Really? You have time to worry about that?) support a professionally run site that actually cares about what they’re doing. There are LOTS of them.  However, Delish ain’t one of them.

Ok, so I’ve made these several times and love them!  However, I need to modify this time due to being on vacation and not having the correct baking dish. Does anybody know if these will work if I make a batch and a half using a 9x13 baking dish?  I am adding one more bar of cream cheese, one egg and 1/4 cup sugar. My thought is to bake it for about 15-20 min longer.  Oh, and should I spray the aluminum first?  I don’t have parchment with me and I’m not going to buy it for one dish. Thanks! Slutty Cheesecake Bars are three over-the-top layers of decadence!

Slutty Cheesecake Bars

Three irresistible layers in one epic dessert. Slutty Cheesecake Bars are layers of chocolate chip cookies, Oreos and a layer of creamy Oreo cheesecake.

¾ cup (170 grams) unsalted butter,

¾ cup (165 grams) packed light brown sugar

¼ cup + 2 tablespoons (60 grams) granulated sugar

tablespoon (15 milliliters) pure vanilla extract

¾ cups (245 grams) all-purpose flour

¾ teaspoon salt

¼ teaspoon baking soda

cup (180 grams) chocolate chips

(14.3 ounces) Oreos

ounces (452 grams) full-fat cream cheese,

2 large eggs,

tablespoon (15 milliliters) Pure vanilla extract

½ cup (60 grams) sour cream,

10 Oreo Cookies, roughly chopped plus 5 additional Oreos for garnish

Preheat the oven to 350°F. Grease a 9×9-inch pan and line the bottom and sides with parchment paper. Allow the butter to soften for at least 20 minutes. Allow cheesecake ingredients to come to room temperature. 

Combine the softened butter with the brown and granulated sugar. Beat on medium speed until well combined, 2-3 minutes. Next add the egg, egg yolk, and vanilla extract and continue beating until well incorporated.

In a separate bowl, combine the flour, salt, and baking soda. Slowly add the dry ingredients into the dough, mixing on low speed until the dough starts to form. Add the chocolate chips. Beat until incorporated. Press the dough into an even layer in the prepared pan.

Place a layer of Oreos cookies over top of the cookie dough, cutting to fit as needed.

For the Cookie Layer

In a mixing bowl, beat the cream cheese and sugar until well combined and free of any lumps, scraping down the bowl as needed.

Next add the sour cream and vanilla extract, beating until well combined. Finally, beat the eggs just until the mixture is combined. Fold in the crushed Oreos. Pour the cheesecake batter over top of the Oreos and cookie dough. Roughly chop 5 more Oreos to scatter on top.

Bake at 350°F for 25-30 minutes. The centers of the cheesecake should be slightly giggly. Remove from the oven and cool completely in the pan. Then refrigerate for a minimum of 3 hours prior to slicing.

There was so much of this that I used 2 8x8 pans and that worked fine.
