oreo cheesecake bites

This decadent dessert takes your favorite sandwich cookies and transforms them into smooth and creamy Mini Oreo Cheesecakes! They're easy to make and loaded with Oreo goodness from crust to topping.

Mini Oreo Cheesecakes

16 Oreo cookies

tablespoons(28 grams) unsalted butter, melted

ounces (452 grams) full-fat cream cheese,

sugar

2 large eggs,

tablespoon (15 milliliters) Pure vanilla extract

½ cup (60 grams) sour cream,

Oreo Cookies, finely crushed

cup (236 milliliters) heavy whipping cream

½ cup (65 grams) powdered sugar

Mini Oreos Oreo crumbs

Preheat the oven to 350°F. Line a cupcake pan with baking liners.

Grind the Oreos  into a fine crumb using a food processor or blender.

In a medium-sized bowl, combine the Oreo crumbs with the melted butter and stir until well combined.

Spoon 1 heaping tablespoon of the cookie mixture into each cupcake liner, and press into the pan with a spoon. Set aside.

Make the Crust

In a mixing bowl, beat the cream cheese and sugar until well combined and free of any lumps, scraping down the bowl as needed.

Next beat in the eggs and vanilla extract until well combined. Finally, beat the sour cream until the mixture is completely smooth. Fold in the crushed Oreos.

Use a large cookie scoop (or ¼ cup measuring cup) to spoon the batter into the prepared cupcake liners. A heaping cooking scoop should fill the liners nearly full, leaving about ¼-inch at the top.

Bake at 350°F for 12-15 minutes. The centers of the cheesecake should be slightly jiggly. Remove from the oven and cool completely in the pan. Then refrigerate for a minimum of 2 hours prior to serving. Keep stored in the refrigerator in an airtight container. Add toppings prior to serving.

Make the Filling

Prepare the whipped cream. Place the mixing bowl and whisk attachment in the freezer for 5 to 10 minutes to chill.

Pour the heavy whipping cream into the chilled bowl and use an electric mixer to beat the heavy cream on medium-high speed until soft peaks start to form.

Slowly add the powdered sugar and continue beating on high speed until stiff peaks form.

Pipe or spoon onto chilled cheesecakes and top with mini Oreos or crushed Oreo cookies.

Oreo Cheesecake Bites are creamy and soft mini cheesecakes with a delicious oreo crust at the bottom. They are so easy to make and a guaranteed hit at any party.

Oreo Cheesecake Bites Recipe (+Video)

Oreo cookies ((Chop 6 of them into small pieces))

cream cheese (softened)

tsp vanilla extract

eggs

sour cream ((or plain Greek yogurt))

Preheat oven to 325°F. (Make sure your oven temperature is accurate, as a higher temp can cause the cheesecake to crack.)

Place cupcake paper liners into a muffin tin pan. Add one Oreo cookie into each paper cup. Set aside.

Add softened cream cheese and sugar to a medium mixing bowl. Beat on medium speed using a hand mixer.

Then add vanilla and eggs. Mixing well until smooth without lumps.

Add sour cream, mix until combined. Tap bowl against your countertop a few times to release any large air bubbles.

Stir in chopped cookies, and mix generally using a spatula. (Be careful not to crush oreos into smaller crumbs.)

Spoon the batter on top of the oreo, filling each to almost the top. Note that cheesecake won&#039;t rise as much as a regular cupcake.

Place in the lower third of the oven and bake for about 20-25 minutes until the edges just start to turn brown. Note that classic cheesecake is supposed to look pale, so you&#039;re not looking for golden brown.

Remove from oven and transfer to cooling racks.&nbsp;

Chill in the fridge for 4 hours or overnight. Serve and enjoy! (You can store them in the fridge for up to 5 days.)
