Orzo Risotto

chicken stock

Heat the chicken stock in a small saucepan over low heat until warmed through

In a medium saucepan, heat 3 tablespoons of the olive oil over medium heat

When the oil is glistening, add the shallot and cook, stirring often, until softened, about 3 minutes

Add the garlic and orzo and cook, stirring, until the pasta is toasted, about 3-4 minutes.Pour the wine into the saucepan with the orzo and cook, stirring constantly, until the wine has evaporated, 2 to 4 minutes

Stir in the warmed broth and salt, then increase the heat to high and bring the mixture to a boil

Reduce the heat to low and simmer, stirring often, until most of the liquid has been absorbed and the pasta is al-dente, 10 to 12 minutes

Remove the saucepan from the heat and stir in the butter and heavy cream

Once the butter has melted completely, slowly stir in the manchego and pepper until the cheese has melted, 2 to 3 minutes

Drizzle the risotto with the remaining 1 tablespoon of olive oil

Divide among 6 bowls and serve immediately.

This was straightforward and easy to make. Served it as a side. So good!

Absolutely stunning. I make risotto often, but this is such a nice weeknight risotto substitute. So much so that I barely make real risotto anymore.

This was incredible! I added rotisserie chicken and a big handful of chopped kale and boom, dinner done! This will definitely be a new go to for when I need something quick and easy for the fam.

One-Pot Orzo

onion

garlic

cherry tomatoes (halved)

orzo ((I used gluten-free))

vegetable broth (or water)

coconut milk (or thin cashew cream)

tomato paste ((optional))

Salt & pepper (to taste)

Red pepper flakes (to taste)

Parmesan

You can watch the video in the post for visual instructions.First, dice the onion, mince the garlic, and halve the cherry tomatoes.

Then, heat the olive oil in a medium saucepan/skillet over medium heat. Once hot, add the onion and sauté for about 3 minutes. Then add the garlic to sauté for 30-60 seconds.

Stir in the cherry tomatoes and cook until they soften slightly. Use a fork or potato masher to gently press them to release their juices.

Add the orzo, mix well, and toast for a minute until lightly golden and fragrant.

Pour in the vegetable broth, a little at a time, while stirring. Keep stirring until no broth remains.

Then, lower the heat to a simmer and pour in the coconut milk, cooking the orzo for about 5-8 minutes.

Next, add the tomato paste (if using), taste, and season the orzo with salt, pepper, and red pepper flakes.

Finally, add more broth if you want a saucier tomato orzo, cover the pan, and cook for a few more minutes until the orzo is al dente, stirring occasionally. Serve in bowls topped with vegan Parmesan and basil – enjoy!

I doubled the onion, garlic, and tomato. As I used soup pasta not orzo I halved the vegetable broth and used about 2/3 the coconut milk. As soup pasta cooks in 2-4 minutes, I adjusted the cooking time accordingly. The basil and parmesan cheese really improve the flavour.

One-Pot Orzo (Healthy Recipe)

This easy, one-pot Mediterranean orzo pasta is a healthy vegetarian recipe, known as orzotto or orzo risotto. Give it a try, it&#39;s delicious!

Mediterranean vegetable orzo pasta (one pot recipe)

leeks

orzo pasta

thyme

mixed vegetables

stock

Greek yogurt

parmesan

Transfer the olive oil and the leeks to a deep saucepan or large skillet and heat over medium-high heat, stirring often, until the leeks soften and are translucent.

Add the orzo pasta, the thyme and the vegetables and stir for 2 minutes. Then, start adding the stock or water gradually, one cup at a time and reduce the heat to a low simmer.When you have used about 6 cups of stock taste the orzo to see if it&#39;s ready. It should be soft but still chewy (al dente). If it needs more time to cook, add more water accordingly.

When the orzo is ready it should have some liquid left in the form of a starchy sauce. If it&#39;s too dry add a splash of water.Remove the pot from the heat and add the yogurt, the parmesan cheese and the freshly ground black pepper. Stir gently to combine, taste and adjust the salt.Optionally, sprinkle some chopped parsley on top and serve immediately.

Very easy and tasted great. The orzo was very creamy and I will definitely make this again! I already shared this recipe with some of my vegetarian friends

A delicious one pot recipe that tasted delicious. The accompanying breadsticks and the cheese cubes gave the whole dish s special touch.
