This is the most gorgeous texture.  It's Brioche without all that butter!! This bread is soft, bouncy, tender and so squishy good!  Tangzhong is simply a bread starter and it isn't hard! Who knew you could get such soft and fluffy bread right out of your kitchen!

NOTE:  This recipe came from Japan, and it uses Grams as a measure. A scale is always recommended whenever you bake bread, and luckily, most scales can be changed easily for grams vs ounces.  

Try it.. you'll love it.  This bread also makes a great cinnamon/raisin bread or soft, fluffy dinner rolls.

Japanese Milk Bread, a.k.a. Tangzhong

270 gram(s) bread flour

gram(s) sugar

gram(s) salt

90 gram(s) tangzhong flour paste (recipe follows)

60 gram(s) milk, whole

gram(s) active dry yeast

gram(s) butter, unsalted

The next time you want warm crusty bread, give this recipe a try. The outside is crisp while the inside stays firm and moist. To get the true crust effect, start the dough the night before. The aroma of the fresh bread baking in the Dutch oven will make the house smell wonderful. When you open the Dutch oven, there's the perfect loaf of bread. This is a very easy bread recipe that can be customized with your favorite herbs too.

In my attempt to find the perfect Italian Bread this is yet another attempt.  Its good but still not EXACTLY what I am looking for!  The taste is perfect, the crumb is awesome the crust is good but still not that hard 1/4 inch thick stuff we get here in the northeast!

Crusty Italian Bread

This bread is always made when we have spaghetti...DELICIOUS!

There's nothing better than the aroma of fresh bread, and these buttery rolls will have your mouth watering while they bake.  Hot out of the oven, they're super soft and just melt in your mouth. Old-Fashioned Soft and Buttery Yeast Rolls

These rolls are relatively easy to make with no bread machine required. They are the manual method of the "Just THAT Good" Soft and Buttery Yeast Rolls. They never fail to make huge, tall, soft, fluffy and buttery rolls. Prep time includes kneading and rising time. They adapt well to any shaping method you like or you may bake in muffin cups. They smell deliciously yeasty while baking and always send me on a trip to yeast roll heaven! FOR LEFTOVER ROLLS: 10 seconds in the microwave will recreate that "just out of the oven" hot roll magic!

I got this recipe out of my favorite bread machine cookbook;Beth Hensberger's, "The Bread Lover's Bread Machine Cookbook (www.harvardcommonpress.com)which I got at a garage sale.  I imagine it is a fairly expensive book...check amazon.  This is my very Favorite white bread recipe.  It makes beautiful bread for every purpose, even rolls.  We like to make it for Pigs and Blankets;one of our favorites for Halloween!  Often when my teenager's friends come over they ask if we have any of these. But usually when we make them whom ever is at home gets them & they're gone!
