This Mediterranean salad is full of summer goodness. Cucumbers and tomatoes are classic summer salad ingredients, but this takes that salad to another level. Herbs and Feta cheese give this dish a Mediterranean flair. What brings all the flavors together is the tangy dressing. This will be the perfect side dish for all your summer meals. Just note, that the dressing is very tangy thanks to the red wine vinegar. If you don't like vinegar, this may not be for you.

Light and refreshing, this fiesta rice salad is a delicious side dish for summer cookouts. It's zesty and full of textures and flavor. All of the chopped bell peppers add a nice crunch, while cilantro adds a pop of freshness. Brown rice and black beans make it a heartier summer salad. This is one delicious salad and just perfect to pair with an enchilada dinner. My entire family enjoyed this salad. Blue ribbon worthy indeed! Thanks for sharing with us Shannon.

This taco salad has simple ingredients, but when you put everything together it creates a really tasty salad. We loved the crunch and flavor of the Fritos - it's a little different than the average tortilla chip. Traditionally taco salads have black beans and we loved the use of pinto beans instead. All the other ingredients are toppings you love on taco salad. This is a quick salad to throw together when you're not sure what to do for dinner. Your whole crew will love this, we did.

Mom's Taco Salad

package(s) taco seasoning

lettuce,

can(s) pinto beans, 15.5 oz.

package(s) Fritos

jar(s) taco sauce

cheese

avocado

sour cream

This is a recipe similar to the one I've eaten for over 50 years. We called it haystacks. The fritos really add a wonderful flavor. Actually we have it every Saturday for lunch--my husband's insistence. His recipe is a bit different in that he makes chili with onions, kidney beans, tomato sauce and hamburger, with spices, in the slow cooker. Then we stack it with fritos, onions, cheese, chili, lettuce, and tomato. Then he puts Italian dressing on his, and I put sour cream and quac on mine. Delicious!
