This coleslaw twist really does have everything but the kitchen sink. It's crunchy, sweet, and tart.  The longer it sits, the better it gets. If you want extra saucy goodness, double the dressing recipe.

This Mediterranean salad is full of summer goodness. Cucumbers and tomatoes are classic summer salad ingredients, but this takes that salad to another level. Herbs and Feta cheese give this dish a Mediterranean flair. What brings all the flavors together is the tangy dressing. This will be the perfect side dish for all your summer meals. Just note, that the dressing is very tangy thanks to the red wine vinegar. If you don't like vinegar, this may not be for you.

Light and refreshing, this fiesta rice salad is a delicious side dish for summer cookouts. It's zesty and full of textures and flavor. All of the chopped bell peppers add a nice crunch, while cilantro adds a pop of freshness. Brown rice and black beans make it a heartier summer salad.
