Spiced Roasted Cauliflower

cauliflower head

water

tahini (or extra virgin olive oil

lemon, juiced

garlic powder

thyme (or dry oregano)

salt

cumin powder

paprika powder

turmeric powder

½ teaspoon ground pepper

Basmati Rice

Grilled / Marinated Tofu

Preheat the oven to 400ºF or 200ºC.

Mix all the ingredients in a bowl, but the cauliflower, until well combined.

Trim the base of the cauliflower to remove any green leaves and the stem.

Make small cuts in the cauliflower head and then rub the marinade all over the cauliflower, allowing some of it to come inside of it.

Place onto an aluminum foil and bake for 1 hour.

Remove from the oven and open the aluminum foil and place back in the oven uncovered to allow the top side to become golden brown.

like to add the remaining juices in the aluminum foil on top of it once I have cut it in quarters.

This oven roasted cauliflower is seasoned with a spice mix and served with a delicious tahini sauce for a flavorful appetizer or side dish - so quick &amp; easy

Oven Roasted Cauliflower with Tahini

cauliflower

olive oil

cumin

coriander

sea salt

black pepper

tahini paste

lemon juice

garlic

Preheat the oven to 425F and line a large rimmed baking sheet with parchment paper.

Use a chef’s knife to slice the cauliflower in half. Then cut the cauliflower into smaller florets using your knife. Place the cauliflower on the baking sheet, add olive oil, cumin, coriander, salt and pepper and toss with your hands to combine. Roast until golden and fork tender, about 35-40 minutes.

Meanwhile, add the tahini paste, lemon juice, garlic and salt to a small bowl and stir with a fork or whisk until it becomes a thick paste. Slowly add water to the mixture and whisk until it’s smooth without any clumps.

Serve warm with fresh parsley and tahini sauce, if desired.
