Golden oven-fried catfish is perfectly crispy and loaded with flavor! This recipe features everything you love about classic southern fried catfish without all the extra fat and calories that come with deep frying.

Easy Southern Oven-Fried Catfish

catfish fillets (about 2 pounds)

yellow cornmeal

all-purpose flour

garlic powder

onion powder

salt

smoked paprika (or regular sweet paprika)

mustard powder

black pepper

cayenne pepper

Olive oil cooking spray (or canola or vegetable oil cooking spray)

Rinse and pat the catfish filets dry with paper towels. Set them aside while you prepare the coating.

To a gallon zip-top bag, add the cornmeal, flour, salt, pepper, garlic powder, onion powder, paprika, mustard powder, and cayenne pepper. Gently shake the ingredients in the bag to combine. Set the bag aside.

Add the buttermilk, eggs, and hot sauce to a large baking dish or pie plate and whisk the ingredients until combined and the eggs are completely mixed in.

Working in batches of two pieces of fish at a time, transfer the catfish fillets to the dish with the buttermilk mixture and coat both sides. Then place the fish in the bag with the cornmeal mixture and gently shake the bag to completely cover the catfish pieces in the breading.

Line the catfish up on the prepared sheet, being careful not to overlap the pieces of fish. Generously spray the tops of the catfish fillets with olive oil or canola oil cooking spray, making sure there are no dry spots left.

Transfer the fish to the oven and bake for 25 to 30 minutes, or until crispy and golden brown. Garnish the fish with chopped parsley if desired and serve with lemon wedges. Don't forget to serve this fish with New Orleans Remoulade or Mississippi Comeback Sauce for dipping!

Prep: Preheat oven to 430°F (220°C). Put a dark-colored roaster OR baking sheet in the oven to heat up - the pan you use to bake the fish on needs to be hot to melt butter on!

Make breading: Mix all ingredients for dry breading in a shallow dish.

Prep eggs: Add eggs to a SEPARATE bowl and beat well.

Bread fish: Dip fish into breading to lightly coat. THEN coat fish with egg. FINALLY, coat fish with breading again, this time you can really pack on as much as will stick! (Just place breaded fish pieces on a plate until you&#039;ve breaded them all.)

Melt butter: Remove pan from oven - careful, it&#039;s hot! Add 3 tablespoons of butter to pan to melt. Spread all over pan and put fish pieces on.

Bake: Bake fish for 10 minutes. Flip, add remaining 1 tablespoon of butter and finish baking for 5-10 minutes or until coating is crispy and fish is cooked through. Finish under the broiler for 2-3 minutes.

Finish: Let fish pieces rest on the pan for 5 minutes after baking, then serve immediately.

Baked Ranch Fish Nuggets

Old Bay seasoning

Preheat oven to 475°F.  Line a baking sheet with parchment paper or aluminum foil (dull side up).  Spray lightly with nonstick cooking spray and set aside.

Stir together the mayonnaise, egg, and ranch dressing mix  in a shallow bowl until smooth.  Spread the panko crumbs in a pie plate or 8-inch cake pan. Arrange these near the prepared baking sheet.

Cut the fish filets into 2-inch square pieces or as close to it as you can get. Dip them, one at a time, in the ranch mixture, rolling to ensure it&#39;s covered evenly. Lift it, allowing excess to drip back into the bowl, then put into the panko crumb dish. Use your clean hand to toss some of the panko crumbs over the top of the fish piece, then flip to be sure all sides are covered in crumbs.

Place it on the baking sheet. Repeat until all the pieces of fish have been coated. Lightly spritz the tops of the fish nuggets with non-stick cooking spray and put the pan into the oven.

Bake for 15 minutes, or until the fish is firm to the touch and the bread crumbs are golden brown. Serve immediately with your choice of dipping sauces.

Preheat oven to 350 degrees

Combine panko, melted butter, and ¼ teaspoon each salt and pepper in a bowl, and stir to combine.

Spread mixture out over a baking sheet, and place in oven, bake for 15 minutes until golden brown.

Transfer mixture to a shallow dish, and stir in fresh parsley and minced garlic. Set aside.

Turn oven temperature up to 425 degrees F.

In a shallow dish, combine flour, paprika, and cayenne pepper, and whisk together. Set aside.

Flour Mixture

In a shallow dish, combine eggs, mayonnaise, and horseradish, whisk until smooth and frothy. Set aside.

Egg Mixture

Prepare baking dish by placing a wire rack inside a rimmed baking dish, and spraying it with non-stick spray.

Pat fish dry, season with salt and pepper, and dredge in the flour mixture.

Dip fish into the egg mixture.

Dredge in panko crumbs mixture, and place on prepared baking sheet.

Repeat with remaining fillets.

Bake until fish flakes apart easily with a fork and internal temp is 140 degrees F (about 18-25 minutes depending on the thickness of the fillet).

Remove from oven, transfer to plate and serve with lemon wedges and homemade tartar sauce.
