4-Ingredient Brown Sugar Dijon Roasted Salmon

salmon

Kosher salt and black pepper,

garlic powder,

Dijon mustard

brown sugar

lemon wedges, chopped fresh parsley, basil, thyme or chives

Preheat oven to 400° F. Line a rimmed baking sheet with aluminum foil and coat lightly with nonstick spray (or use parchment paper).

Place salmon skin-side down on the prepared pan. Season the top of each fillet with plenty of salt and pepper. Sprinkle with garlic powder.

In a small bowl, stir together Dijon mustard and brown sugar until smooth. Spread the Dijon mixture on top of each salmon fillet.

Roast in the oven for 8-11 minutes, or until the fish flakes easily with a fork. For a crispy, browned exterior, place the salmon under the broiler during the final 1-2 minutes of cooking time. Just make sure that you keep a close eye on it so that the sugars don’t burn.

Garnish with lemon wedges and fresh herbs, if desired.

– 1 Tablespoon balsamic glaze, to drizzle on top of salmon

Preheat the oven to 500 degrees Fahrenheit. Place a large rimmed baking sheet into the oven to heat up while the oven is preheating.

Prep the salmon. Season each portion with salt, ground black pepper and drizzle with olive oil. Make sure to evenly coat the salmon with the oil on all sides.

When the oven is preheated, carefully remove the hot baking sheet out of the oven and place the salmon on top. You will hear it sizzle right away. Reduce the oven temperature to 250 degrees Fahrenheit and roast the salmon for 12-14 minutes, until it reaches 130-135 degrees Fahrenheit in the center for medium doneness and 135-140 if you want the fish to be cooked through all the way but still really juicy.

While the salmon is in the oven, prepare the tomato topping. Chop the tomatoes and fresh herbs. Add the garlic and half the lime juice. Season to taste with salt, pepper and add more or less lime juice. You can also add some red onion or green onion. Omit the garlic if you prefer. Set aside.

Remove the salmon from the baking sheet right away.

Drizzle the salmon with lime juice, add the tomato topping to each portion and drizzle with balsamic glaze. Serve immediately.

Oven Roasted Salmon With Tomato Basil Topping

Smokey roasted salmon over fresh tostadas, topped with avocado + mango salsa- this meal comes together in less than 30 minutes!

Chipotle Salmon Tostadas + Mango Salsa

street taco size corn tortillas

chipotle seasoning

mango

tbsp chopped cilantro

tbsp chopped red onion

jalapeno diced

avocados (mashed)

lime juice

Preheat the oven to 425℉

On a large baking tray, drizzle one tsp of olive oil. Place the tortillas on the tray- making sure each one of them gets coated in olive oil on the bottom. Drizzle a little more olive oil over the top, rubbing it in so that each tortilla is coated. ***you can use an olive oil spray to save on calories

Cook the tortillas on the top rack of the oven for 5-8 minutes or until browned and crispy.

In the meantime, wash + pat dry the salmon. Lay it flat on a baking tray and season with southwest chipotle seasoning, drizzle with 1 tsp of lime juice + 1 tbsp of olive oil.

Once the tortillas are done, add the salmon into the oven on the top rack and cook for 10-15 minutes or until the salmon is cooked all the way through (145℉).

While the salmon is cooking, toss together the mango, cilantro, onion + jalapeno in a bowl.

Add the smashed avocado to each tortilla, top with the salmon, fresh lime juice + as much mango salsa as you want! Enjoy!

You can serve this meal with a side salad, grilled veggies, rice + beans or maybe even add some cabbage to each tostada!

Sheet Pan Salmon and Vegetables

carrots (chopped)

zucchini squash (chopped)

½ red onion (sliced)

broccolini (chopped*)

¼ tsp sea salt (divided)

Preheat the oven to 400 degrees Fahrenheit.

Chop all of the vegetables and spread them over a large rimmed baking sheet in a single layer.

Drizzle the vegetables with 2 tablespoons of avocado oil (or more if it seems like they need it) and sprinkle with 3/4 teaspoon of sea salt. Note: You want the vegetables to have a nice coat of oil to protect them from burning during the baking process, but there shouldn’t be so much oil that they are soggy.

Roast the vegetables on the center rack of the preheated oven for 15 minutes.

While the vegetables are roasting, coat the salmon filets with avocado oil, then sprinkle with sea salt, garlic powder, and paprika.

Remove the vegetables from the oven and give them a thorough stir (I use a metal spatula for this).

Make room on the sheet pan for the salmon (simply scoot the vegetables away from the center). Place salmon filets on the baking sheet then bake for another 10 to 15 minutes, or until the salmon is cooked through. For crispy salmon skin, place the oven on the high broil setting for 3 to 5 minutes at the end. 

Salmon is considered fully cooked when it reaches an internal temperature of 145 degrees Fahrenheit. You can also tell salmon is cooked through when the center is completely opaque and light pink. Do note that the exact cooking time will vary depending on the thickness of the fish, so for the best result, use a meat thermometer to test the internal temperature.

Serve salmon and vegetables with fresh lemon slices and enjoy!
