This Over the Top Smoked Lasagna is prepared start to finish in the smoker for a meaty, cheesy, and smoky spin on a classic casserole.

Over the top smoked lasagna

green bell pepper (chopped)

onion ((about 1 small))

tomato (chopped)

basil (chopped)

tsp All purpose BBQ Rub

Box of oven ready lasagna noodles

ricotta cheese

parmesan cheese

Preheat the smoker to 225 degrees F.

In a large Dutch oven (or similar) add the sauce, green pepper, onion, tomato, basil, garlic, and BBQ Rub and stir until combined.

Place the pot on the lower grate of the smoker and add the Italian sausage and ground beef directly on the grate above the pot of sauce.

Close the lid and let smoke for about 2 hours or until the internal temperature of the meats are at 160 degrees F.

Pull everything off of the smoker and raise the temperature to 300 degrees F.

Once cooled slightly, use your hands to pull the meat into pieces and then add to the pot of sauce and stir.

In a medium bowl add the ricotta cheese and egg and mix until well combined, set aside.

In a 9x13 baking dish or aluminum pan, add a decent amount of sauce to the pan and spread to cover the bottom.

Lay a row of lasagna noodles over the sauce (breaking some into smaller pieces if necessary) and add half of the ricotta mixture and spread over the noodles then add some of both the Italian blend cheese and parmesan cheese.

Repeat the layers once more.

Then finish with one layer of noodles, sauce, and more cheese.

Add 3/4 cup of water around the edge of the lasagna.

Transfer to the smoker and place on the grate and let bake uncovered for about 20 minutes.

Then cover with foil and let bake for about an hour covered or until hot throughout and the cheeses are melted.

Let rest for about 10 minutes before cutting and serving.

Lasagna Meatloaf

beef (20% fat)

turkey (you could use pork if you prefer)

onion (diced)

garlic (minced)

parsley (chopped)

tomato paste

panko breadcrumbs

milk

Italian seasoning

salt

black pepper

lasagna noodles

mozzarella

olive oil

shallot (minced)

oz crushed tomatoes

worcestershire sauce

honey

In a large bowl mix all the meatloaf ingredients to combine. Stir until fully mixed.

Bring a pot of water to a boil and cook the lasagna noodles until tender but not fully cooked. They should still have a slight bite to them.

Lay two of the noodle snext to each other on a sheet pan lined with parchment so that the ruffles overlap in the center. Remove them from the pan but keep an eye on where they were so you can use that as a guide. preheat oven to 425

put 1/4 of the meat down on the pan where the noodles were. Place the two noodles back on top and use your hands to shape the meat into a rectangle under the noodles.

Spread 1/3 of the ricotta onto the noodles, then sprinkle on some cheese.

Repeat with the next 1/4 of meat, then noodles and cheeses. Then one more time, and then the remaining meat on top. It should be meat on the top and bottom with 3 layers of pasta and 4 layers of meat.

Shape the loaf a bit with your hands to make a nice rectangular box. Put into the oven for 30 minutes.

Right when the loaf goes into the oven, put the olive oil on in a frying pan and add the shallots. Cook 5 minutes. Add the garlic and cook 1 minute. Add in the tomato paste and cook, mashing and mixing the paste, for 3-5 minutes until fragrant.

Add in the can of tomatoes, the worcestershire, and the honey and stir to combine. Heavily simmer for the remaining 20 minutes or so time the loaf has to cook.

Remove the loaf and spread the sauce on top evenly so it drips down the sides a bit. Return to the oven for about 15 more minutes until fully cooked.

Allow to cool for 10 minutes before slicing and serving with extra sauce.

Smoked Chuck Roast Chili

onion

chili seasoning

oz W Sauce

120 oz tomato sauce

lb chuck roast ((2 roasts, 2.5 lb each))

Your favorite BBQ Rub

salt and black pepper (to taste)

oz dark red kidney beans (drained)

oz cannellini (white kidney beans (drained))

oz black beans (drained)

oz beef stock (or broth if needed)

tomato paste (if needed)

Saute the onions in the oil until soft

While the onions are saute-ing, add the tomato sauce, chili powder, and W sauce in the roasting pan

Add the softened onions and mix thoroughly

Season the chuck roasts with salt, pepper and rub

Place the chuck roasts on the roasting rack and set the rack, chuck roasts and all, into the roasting pan

Place the pan in the smoker which is loaded with Bear Mountain Premium Pellets and set to 300F

Smoke until the chuck roasts hit 140-150F internal

Then carefully remove the pan, making sure not to burn yourself, and crank up the grill to 500F

Sear off the chuck roasts to get some browning

Remove the charred chuck roasts from the grill and drop the temp to 400F

While the chuck roasts rest for about 10 minutes, add the beans to the pan

Then chunk up the chuck roasts to bite size pieces and put back in the pan

Mix the beans and meat in thoroughly

Add beef stock if needed and put the pan back in the smoker

Also place a cast iron pan in the grill to preheat the pan

Once the cast iron pan hits 350-400 rub butter around the inside the pan (including the sides) and pour in the corn bread batter

Place the cast iron pan and corn bread back in the grill

After about 30 minutes, when a toothpick goes in and out like butter, the cornbread is done

Serve the chili and cornbread together
