These healthy brownies have it all – the luscious fudgy texture, the intense chocolate flavour and they’re easy to make! Plus, they’re gluten, grain and dairy free, as well as paleo.

Super Fudgy Healthy Brownies (Gluten Free, Grain Free, Dairy Free, Paleo)

oz (125 g) 80%+ dark chocolate, chopped

(50 g) coconut oil, softened at room temperature ((but not melted))

eggs, room temperature

almond flour

(30 g) cocoa powder

salt

dark chocolate chunks and chips ((optional))

Pre-heat the oven to 355 ºF (180 ºC) and line an 8x8 inch (20x20 cm) baking pan with greaseproof/baking paper.

In a heat-proof bowl above a pot of simmering water, melt the dark chocolate and coconut oil together. Set aside.

Using a stand mixer with the whisk attachment, or a hand mixer with the double beater attachments, whisk the eggs and coconut sugar until pale, fluffy and tripled in volume. This will take about 5 - 7 minutes.

Slowly drizzle in the melted chocolate while whisking on low speed. Whisk until the chocolate is fully incorporated.

Sift the almond flour, cocoa powder and salt into the egg-chocolate mixture, and gently fold in the dry ingredients (using a spatula) until no clumps remain.

Stir most of the chocolate chunks and chips into the brownie batter, then transfer the batter into the prepared baking pan. Smooth out the top, and sprinkle over the rest of the chocolate chunks and chips.

Bake in the pre-heated oven at 355 ºF (180 ºC) for 18 - 20 minutes, or until an inserted toothpick comes out with moist crumbs attached (for fudgy brownies) or even with some half-baked batter attached (for gooey brownies).

Serve the brownies either still warm or once cooled.

The healthy brownies keep well in a cool dry place in a closed container for 3 - 4 days.

Preheat oven to 325º F. In a medium bowl, combine eggs and coconut sugar. Using a hand mixer or stand mixer, beat on high until light and fluffy, about 3-5 minutes. Mixture will have increased in volume and will be sticky, rather than thin or runny. Stir in almond flour, coconut flour, dark cocoa powder, cooled liquid coffee, and vanilla extract. Stir until combined.

In a medium, microwave-safe bowl, combine 1 cup chocolate chips and coconut oil. Microwave in 60-seconds bursts, stirring very well in between each round, until the chocolate has just melted. Stir until completely smooth, then pour into the brownie batter. Stir well to combine.

Fold in remaining 1/4 cup chocolate chips.

Line a 9x9&quot; baking pan with parchment paper. Pour brownie batter into the prepared pan, making sure batter fills all corners evenly. Bake 35-40 minutes, or until a toothpick inserted into the center of the brownies comes out with moist crumbs. The toothpick should not be coated in batter, but it should not be clean, either. When you see moist crumbs, remove from the oven and let cool completely on the counter or on a wire rack. When cool, lift out of the baking pan using the sides of the parchment paper. Cut into 9 equal squares.

These Coconut Flour Brownies are very Allergy Friendly, fudgy, moist and delicious. Free of Dairy, egg, soy, yeast, gluten, grain, gum. Makes 8 by 8 brownie pan

Coconut Flour Brownies

light coconut milk or almond milk or other non dairy milk

Tbsp flaxmeal

tsp psyllium husk (or use flaxmeal)

dark chocolate (or use semi sweet to make less bitter)

vegan semi sweet chocolate chips

maple syrup

Tbsp sugar

Tbsp oil (coconut

+ 2 Tbsp Tbsp coconut flour

cornstarch (or arrowroot or tapioca starch)

tsp baking soda

tsp baking powder

chocolate chips

Preheat the oven to 365 degrees F / 180ºc.

Heat coconut milk to just about a boil. Pour into to a bowl. Add the flax meal, psyllum husk, Dark chocolate, semi sweet chocolate and let sit for minute. Then mix well to melt to a smooth consistency.

Add the maple, sugar, oil, vanilla extract, and mix well. Let sit for 5 minutes.

In another bowl, add coconut flour, starch, baking powder and soda and salt. Whisk well.

Add dry to the wet and mix to combine. Fold in the chocolate chips. Taste and add more sugar if needed. The batter will be more of a spongy soft dough and it will continue to dry out. Do not let it sit for long. bake immediately. Transfer batter/dough to greased or parchment lined pan. Pat down to flatten.

Bake at 365 degrees F / 180ºc for 24 to 25 minutes. Cool for 10 minutes before slicing. If using smaller multiple pans, bake for 18 to 19 minutes. Brownies are best served warm right after baking. Store on the counter for the day and refrigerator for a few days. Reheat before serving.

These brownies could also be called gluten free brownies or paleo brownies. Whatever name you want to use, they are easy and delicious!

Preheat oven to 350 F. Grease 9 x 9 baking dish.

Mix all ingredients together with whisk or hand mixer.

Pour into prepared baking dish.

Bake for 30 - 35 minutes - until a knife inserted comes out clean.

Cool before cutting.

These brownies are a gluten-free combination of coconut flour, sugar, eggs, vanilla, and pecans for a soft, chewy, and decadent dessert. These are so delicious that you won&#039;t be missing traditional brownies.

Preheat your oven to 325° F. If using pecans, toast them in the preheating oven for 5-10 minutes until fragrant. Prepare an 8-inch square baking pan by lining the bottom with parchment paper.

Melt together the coconut oil and chocolate (either in a saucepan on the stove on low heat or in a bowl in the microwave). Add sugar, eggs and vanilla extract, and optional instant coffee granules. Whisk to combine.

On top of the wet ingredients, add coconut flour and sea salt. Stir the dry ingredients into the wet mixture until a smooth batter forms.

Pour the batter into the prepared baking dish. Add the toasted pecans on top, if using.

Bake the coconut flour brownies for about 25 minutes. The top should look set and the centre will be no longer jiggly.

Let the brownies cool to room temperature, then refrigerate for 1-2 hours before slicing.

Store the brownies refrigerated in an airtight container for up to a week.

How to Make Coconut Flour Brownies

These dense, rich almond flour brownies are made with melted dark chocolate and cocoa powder for the ultimate chocolate flavor.

dark chocolate (chopped (I like to use a mix of unsweetened chocolate and dark chocolate,

eggs (at room temperature)

cocoa powder ((either natural or Dutch-processed))

blanched almond flour

baking soda

Preheat your oven to 325°F. Grease an 8-inch square baking pan, and then line it with overhung sheets of crisscrossed unbleached parchment paper. Set the pan aside.

Place the chocolate and coconut oil in a small, heat-safe bowl and then place the bowl over a small pan of simmering (not boiling) water, taking care that the bowl doesn’t touch the simmering water.

Melt the chocolate and coconut oil, stirring occasionally, until smooth.

Remove the bowl from the heat, and add the coconut sugar and honey to the mixture.

Whisk to help the coconut sugar to dissolve in the warm mixture, and to integrate the honey.

Alternatively, the oil and chocolate can be melted in the microwave in 30-second bursts, stirring in between until melted and smooth before adding the coconut sugar.

In a large bowl, place the eggs, and whisk or mix until well-beaten and combined.

Add the melted chocolate, oil, and sugars to the bowl slowly, whisking constantly.

Add the cocoa powder and whisk until the cocoa powder has been absorbed. Using a handheld mixer, beat until very well-combined.

Add the almond flour, coconut flour, baking soda, and salt, and mix with a silicone spatula or spoon until just combined. The batter will be thick and sticky.

Transfer the brownie batter to the prepared pan and, using an offset or silicone spatula, spread into an even layer. It helps to moisten the tool you are using to smooth the top a bit to prevent it from sticking.

Place the pan in the center of the preheated oven. Bake just until the brownies are no longer wet in the center, about 25 minutes. The brownies will not appear wet and as shiny in the middle, and a toothpick inserted there will come out with only a few moist crumbs, but not wet.

Remove the brownies from the oven and allow them to cool in the pan at room temperature until the pan is no longer hot to the touch.

For clean lines when you slice the brownies, place the brownies, still in the pan, in the refrigerator to chill for about an hour before slicing them.

When you’re ready to slice the brownies, remove them from the pan and peel away the foil. Slice the brownies into 9 or 12 equal rectangles or squares.

Wanted to post an update. Didn’t use anything to make them more Most bit tried a different chocolate with a higher cocoa butter content. Made a huge difference. Still not super fudge like but definitely better.

These did not turn out like I expected for me. They were ok, but not fudge like. More like chocolate cake. They were a bit dry as well. May try again but will add a ripe banana for more moisture or something similar.
